From my first glance of this beautiful knife, I knew it should be called "Gekko”, or 月光, which means "Moonlight" in Japanese. From every angle, the Gekko knife reminded me of the way that the shape and light of the Moon changes each night.
Gekko knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. They feature a hand sharpened and hand honed VG-10 stainless steel blade core that is clad on both sides by a 15-layer Damascus stainless steel (HRc. 60-61. 50/50 symmetrically ground double beveled edge).
Gekko knife uses a full-tang construction, and has Mahogany wood handle with a stainless steel bolster and handle rivets.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

My Italian mother in law is a fantastic cook always making wonderful meals for large family gatherings. The Gekko series are really great quality knifes for the price and The VG10 blade requires no fuss but holds an really good edge. As I said in the title it was the best gift ever. Not just for my mother-in-law but also for all of us who get to enjoy her delicious cooking.
This Gyuto was a revelation over my heavy Wüthof German style chef's knives. light thin and very sharp. I prefer Western style handles What I like about This series from JCK is their fantastic value you would have to spend much more money to get something that might be better. The thing is could you tell the difference?
This knife arrived razor sharp, well balanced, comfortably light and solid feeling in hand. The Damascus pattern plus hammer texture is beautiful and it really makes the knife feel special. This isn't my first Japanese knife but it's my first gyuto and I would highly recommend it.
