The “Aogami Super Black Forged Knife” has a blade core of Aogami Super that is sandwiched between two layers of corrosion-resistant soft stainless steel. The laminated blade is decorated with a Tsuchime (“Hammered pattern”) texture and a traditional Japanese Kurouchi (“Literally, “Black-forged”) finish that ads a touch of rustic style. This knife is available with Ironwood’ handle scales that have a rich warm color and dramatic figuring.
The handle is carefully contoured by hand to ensure that it can be gripped comfortably and are fitted with a stainless steel bolster for improved durability and blade balance.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

I like this knife. Its shape and design. I get aesthetic pleasure from using it. It's very handy, sits perfectly in my hand and cutting edges are smooth. It's also very good balanced and easy to work with. The only drawback is that the blade oxidizes very quickly. It is worth leaving it wet after washing for half an hour and rust spots appear on the blade. Therefore, I have to wash and dry it immediately after use.

I was surprised but very happy this knife arrived in only two days! This is my first Japanese knife, and although I knew what I was looking for (mostly), staring at websites and making a choice without holding it first made me really nervous. It more than lives up to what I was hoping. I live alone and just wanted a small knife for minor prep work. It feels great in my hand. The blade length is perfect for what I wanted, and the sharpness is everything I'd read about with Japanese knives. It's also more beautiful than the pictures show. I never write reviews, but I'm so thrilled with knife and with the customer service, I just had to say something. Now off to plan my next meal.....
