At the end of the year 2019, after a long wait, we are finally introducing the new JCK Natures 青雲 "Blue Clouds" knives, which have just been finished. We are very excited to introduce these new products to you.
The "Blue Clouds" knives have an impressive mirror polished blade with a Tsuchime Hammered Texture. The rust-resistant AUS-10 High Carbon Stainless Steel blade core is clad with Stainless Steel and has a stylish, practical Kiritsuke blade shape, which is very similar to a multi-purpose Santoku or Bunka knife and is very capable of performing a wide variety of cutting tasks. Heat treated to HRc. 60-61, the double bevel edged blade has a 50/50 symmetrical grind.
The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the mirror polished Kiritsuke blade, they are also strong and resist both water and shrinkage. The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.
These knives feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

I bought this knife as a gift for my sister. Upon receiving it, it was even more beautiful than what I expected from the photos. The weight distribution seems (very slightly) more biased towards the handle than in my own petty (Takamura R2). I'll probably buy more of these in the future as gifts for the rest of the family :)
I got this as a gift for my mom. She's been loving it so far and the quality is way better than the Cutco ones she was using. I personally prefer high carbon steel, but the stainless is fantastic for someone who just needs a good tool without all the fuss. I had to give it a good edge out of the box, but it holds an edge well. I actually wish I got one for myself! It's very comfortable and the blade length and width is perfect for anything that doesn't require the weight and width of a chef knife. The k-tip is fantastic for more fine work and it's surprisingly nimble.
Great little petty with the main appeal being the K-tip. Fairly sharp out of the box, but really comes alive after a tickle on a 4000. My first JCK knife, would definitely try another.
A beautifully made knife that is enjoyable to use. Sharp out of the box, and really sharp after a little work with a ceramic rod. Good balance and grip, making it very nimble in my hand. Excellent for detailed cutting of vegetables, meat or fish. A pleasure to work with under a wide variety of circumstances. Highly recommended.
