We often receive requests and inquires about small size, compact handling, high-quality Chinese Cleavers, so we recently decided to begin selling the Sugimoto SF-4030 Small Chinese Cleaver, with Carbon Steel blade.
The blade is made with a very pure Japanese virgin carbon steel, which provides excellent edge retention, edge sharpness and ease of re-sharpening.
The Natural Wood Handle has a comfortable rounded shape, two carved grooves that improve grip, a durable Stainless Steel bolster and balances the weight of the blade very well.
The Sugimoto SF-4030 Chinese Cleaver is the smaller size with lighter than standard for comfortable balance and weight.
The Chinese Cleaver is a highly versatile general-purpose kitchen knife that can be used to slice, chop, mince, scrape, and even crush ingredients. The tall blade of the Chinese Cleaver enables it to be safely guided with the knuckles of your free hand when 'tap chopping’, ‘push cutting’, or ‘pull cutting’. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Excellent knife. Good balance and sharp out of the box. It’s my first Chinese cleaver - My go-to knife before was a Nakiri and the transition felt pretty natural. I have a professional background and was debating about getting the bigger size (no. 6) – happy I went with the smaller version, which is sufficient for home use.

First, I would like to thank the JCK team for having this product available for purchase. The shipping speed from Japan to USA was lightning fast, ordered on Tuesday and DHL delivered on Thursday in less than 48 hours. Amazing people and amazing service as always! I am extremely happy and proud to own this cleaver model SF-4030 made by Sugimoto. This baby cleaver is unbelievably sharp right out of the box, probably one of the sharpest in my collection of cleavers ranging from: Moritaka, Takeshi Saji, Mcusta, Kato, Tojiro, Yaxell Gou, Enso, etc... I have used this cleaver prepping vegetables and roots to make "broth" and it blasted through 125 lbs of: carrot, daikon radish, celery roots, beets roots with no trouble. This fair and decent looking cleaver from Sugimoto surprised me not only with its sharpness, but its comfort level is also very good. It is not so long, not large, not heavy, just about the right on length x weight. This model I got weighted at 335g and sized at 190mm L x 95mm H. The Sugimoto CM-4030 cleaver is also the same size as the SF-4030 cleaver, CM- is stainless steel and SF- is carbon steel. I was torn between the two choices but was glad i chose the SF- carbon steel version. Other websites claimed this carbon steel is Shirogami #2, JCK called it Japanese ****** carbon steel. Regardless, what it is called.. the edge of this knife bites on my cutting board. I had to go easy on my chopping and slicing as the edge easily cuts deep into the board. Overall, I am extremely satisfied with this product and will look forward to add the Sugimoto #6 to my collection later on. A big applause to Sugimoto!
