Using a high purity special stainless steel produced by a Swedish steel company, Misono has combined time-tested tradition techniques with new technological advances to create their ultimate line of stainless steel Chef's knives. The UX10 Series have exceptionally rust-resistant blades yet, just like high carbon steel knives, they offer extremely sharp edges and are easy to re-sharpen (HRc. 59-60). Perfect balance and grip is provided by using full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and a nickel silver bolster, which adds a stylish accent.
This rare, upgraded versions of the Misono UX10 Series knife features unique oval dimples ground in to the blade. The oval dimples help to prevent food from sticking to the blade during cutting and also reduce friction, creating a smooth and effortless cutting experience.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

...though a little overpriced. But it's really worth it! On behalf of the spine, you'll need to round up the edges a little for daily 60 to 90min use. It's really well made and a real workhorse ( time based on professional use, a friend Chef has one for 7 years now and rocked it down till the dimples). This was supposed to be a present for him but he got one already from his wife elsewhere. 340€ in Europe! So it's mine now. Seems to be sharpened even when you get to the dimples. In a normal use for home kitchen, 20min, 5 days, this will last for a generation... Well balanced, the Sweden steel is now mentioned EU steel! Still from Sweden it refers to a "green" steel, meaning the way it is produced is ecologically and environmentally friendly. Notice that blade length is more likely 220mm! (Refer also to Cary's previous reviews I totally can reconstruct and follow) Thanks once more to Koki and his team for excellent service and support
I own way too many Misono UX10 knives, they are a quality that just make prep work in the kitchen an experience. They hold an edge for ever it seems, and are effortless with cutting through anything. I have owned Wustoff, Henkels, and they can’t even be put on the same level.
