Saiun Damascus knives have a cutting edge of VG-10 stainless steel that is clad with Damascus (Total of 33 layers; HRc. 60-61) and use Kanetsugu’s special convex edge profile to provide outstanding cutting performance and excellent edge retention. A comfortable black linen Micarta handle accentuated the wood-grain pattern of the Damascus and is shrink-proof, very durable and water-resistant. The stainless steel bolster improves the blade balance and durability and looks stylish next to the red fiber spacer. For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives.

Hello! I am very pleased with the knife. Good cut, imprisoned, as you recommended by 12 degrees. Doesn’t get much to the stated hardness. Heavy is 226 grams! I would like it easier. I was pleasantly surprised to receive this knife! I really like the things that people do for people. This applies to the knife and the way the knife was Packed! I'm not a cook, but I cook daily and use knives daily. Used this knife to cut meat, fish, vegetables. This was my first experience with a knife whose cutting edge is hardened to 60-61 Hrc. I have enough Euro-chef knives and one cheap Santoku that has to be sharpened often. Now there's another one. The knife is convenient, I tried to hold it in my hand before buying, and was not disappointed. But now I use the shorter model more often. What I was somewhat saddened this discrepancy Hrc hardness. On my knife it does not match the stated.
