Saiun Damascus knives have a cutting edge of VG-10 stainless steel that is clad with Damascus (Total of 33 layers; HRc. 60-61) and use Kanetsugu’s special convex edge profile to provide outstanding cutting performance and excellent edge retention. A comfortable black linen Micarta handle accentuated the wood-grain pattern of the Damascus and is shrink-proof, very durable and water-resistant. The stainless steel bolster improves the blade balance and durability and looks stylish next to the red fiber spacer. Kanetsugu use all their passion and experience to make certain that these extremely beautiful knives are still exceedingly practical and cut exceptionally well.
A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

Fantastic service, lighting fast shipping. A pleasure to purchase from
I ordered this knife well before Christmas, and then handed it over to my mother, who eventually gave it to me as a Christmas gift, what a nice gift ! Background info…I spent 15 years as a knife maker here in Canada, so I am very aware of what makes a quality knife. On that note, I think my opinion of this knife will be fairly accurate. In short, this knife is made the way I would make a knife, the fit and finish are very tight and well executed overall a beautiful well-made knife, that II would recommend to anyone. The blade is gorgeous with its 33 layers of Damascus. In use and when very sharp it performs beautifully. I find it quite comfortable to hold and because of it’s 150 mm length it is useful for many tasks. I purchased the matching Saya. Initially I found the Saya too tight of a fit on the blade. I knew that after pushing the knife into the Saya many times it would probably start to leave a mark on the blade, so I took a thin, steel ruler and a piece of sandpaper and gently sanded the inside until I had the perfect fit, actually quite easy to do. I mentioned the issue with the Saya and they apologized right away and offered a replacement, but I said it was a minor issue and I would take care of it, so they gave me a free shipping coupon anyway, which was nice of them. Other than this minor issue with the Saya, the whole experience of purchasing this knife was great, this is an example of how customer service should be handled. Shipping was fast and I was well informed through the whole process. I would recommend this knife to anyone, and I plan to buy at least one more in this same series, probably the Santoku.
I've used the knife a few times, and i can say the 150mm length is perfect. the knife is gorgeous and sharp. i would recommand to anyone. for the price i was surprised of the fit and finish. I haven't sharpen it but my experience with VG-10 is if you keep at it it's rather easy to sharpen. the damascus pattern is very nice. the damascus pattern if very well seen at a 90 degree or perpenticular angle but subdues as you can to a more inclined view at around 30 degree you hardly see it. not sure if all knifes are like that.
I have all three Saiun knives, purchased at different times. There must have been a reason for that
The knife has been terrific. Great value for the money.
