 During the very hot summer season of 2022, we have been working closely with Mr. Gotou and his special Craftsman Team to produce an impressive, stylish and practical Boning Knife.  We are pleased to announce the "Kagayaki Basic Series Mighty Boning Knife” is now finished and available for purchase.

Expert Craftsmanship and true Passion are necessary to create the beautifully polished, three-dimensional Mighty Boning Knife blade; The perfectly polished blade tip and spine are particularly impressive.

In addition to maintaining the same high-quality finishing and manufacturing standards established by our existing Kagayaki Basic Series line, we wanted to create a nice visual accent and provide extra comfort when holding the knife in a pinch grip.

KAGAYAKI Basic Series” knives are made with V-Gold No.1 stainless steel, heat-treated to HRc. 60. This beautiful sparkling blade is meticulously hand finished and has smooth pakkawood handles that fit your hand comfortably. In terms of quality control and cutting performance, we think this knife is a work of art, it will bring joy to home cooks and chefs alike.

Kagayaki Basic Series knives are made by Mr. Gotou’s special Craftsman Team. For 40 years, it has been Mr. Gotou’s goal to make highly functional blades that have excellent cutting performance, blade geometry, edge sharpness and durability. He has made knives for numerous famous Japanese retailers and knife companies, so we recommend his knives with confidence.

 The Garasuki shares the same overall blade profile as the Honesuki, but the Garasuki is larger in size, thicker, and heavier. These features make it ideal for de-boning and breaking down the larger sizes of poultry and cuts of meat. Just like the Honesuki, many people have found this knife is also capable of filleting fish or red meat and can perform many of the tasks that Western boning knives are used for.

 The larger, thicker, heavier, more durable, Single Bevel Edge of the Mighty Honesuki Boning Knife can also be used to efficiently fillet and portion saltwater fish. It is an ideal knife for de-boning and breaking down larger-sized poultry and big cuts of meat.

  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.

To ensure an optimum balance of high cutting performance, edge retention and strength, the blade is ground to have a thin, convex cross section and a fine edge. The blades are manually ground on a large wet grindstone; a process that requires the sensitive touch and skill of an experienced craftsman. Kagayaki Craftsman’s Story: Creating VG-1 Mono-Steel Knives

Question: For over 40 years, the Kagayaki Craftsman Team has concentrated on making Mono-Steel knives (One-piece construction) in VG-1 Stainless Steel — Why did the team make this decision?

About 40 years ago, high hardness stainless steels that offered good cutting performance were rare, so the main material for Japanese knives was carbon steel. At that time, many people thought it was impossible to make stainless steel knives with great sharpness and cutting performance. The experienced Kagayaki Craftsman Team challenged themselves to create a stainless-steel knife with a hardness level and cutting performance similar to a high carbon steel knife. They discovered VG-1 stainless steel, which has a relatively high carbon content, could offer hardness, cutting performance and sharpness that was similar to a carbon steel knife. At that time, creating stainless Mono-Steel knives with a high Rockwell hardness and high cutting performance was a great technological achievement. However, the craftsmen had to spend a lot of time and energy researching and testing how to make high quality, practical stainless-steel knives.

For over 40 years, the experienced Kagayaki Craftsman Team has concentrated on making Mono-Steel blades with the use of traditional blade crafting techniques, including Mizu-To (Whetstone Grinding and Sharpening) and Hizumi-Tori (Blade straightening). These well preserved traditional handcrafting processes are essential when making practical, high-quality, Mono-Steel knives, which can be particularly difficult to grind and sharpen. The Kagayaki Craftsman Team is proud to preserve their traditional handcrafting methods and use this great Japanese steel to make these Mono-Steel knife blades. They believe the combination of steel, knife construction and expert craftsmanship produces the most practical, cost-effective knives.

    Great boning knife.

    I am a chef working in a long term health care facility and am always looking for ways to improve the quality of our offerings for the residents. A few months ago we decided to put roast turkey on our bi-weekly menu. For efficiency's sake it's faster and easier to break down the whole turkeys first and then roast them. I already owned a Tojiro Honeski for breaking down chickens and loved it for that application, but it really wasn't beefy enough for 50 turkeys. Researching a better option I found the JCK Original Kagayaki Basic Series KG-19 Mighty Boning Knife and chose it over the Misono swedish steel Garasuki and the Glestain 420TK Garasuki. So far I'm highly pleased with the product. It was very sharp out of he box, great fit and finish, its got just the right amount of heft for cutting through joints but still it's nimble enough for fine work. The choice to use VG-1 was a good one also. It has very good edge retention, is easily sharpened, and seems to be both tougher than VG-10 and less prone to micro chipping. Overall I would rate the knife and 9 out of 10, my only...I wouldn't say complaint, maybe preference would be better, but I would have liked a little more rounding on the spine and choil but again that's just a personal preference. It wouldn't be fair to finish this without mentioning the customer service provided by JCK which was exceptional as always, solid 10/10 there.

    Second purchase from JCK, this high-end Boning Knife is incredible!

    There is nothing "basic" about this knife. It is gorgeous, yet scares my wife. It's specific purpose is boning chicken and turkey, and can probably be used for other types of delicate boning as well. This is super sharp out of the box and ready to use. Shipping from Japan is ridiculously fast too. I expected it to take a couple of weeks, but it was here within a few days. Amazing. This knife is superb.
