After years of collaborative development between the Knife Forums “In the Kitchen” members and the renowned master craftsman Mr. Ichiro Hattori, we are proud to introduce our first JCK Original — the Hattori FH Series, a line of high-end chef’s knives born from passion and precision.

Each Hattori FH knife is produced in very small batches to ensure exceptional quality, accuracy, and performance. Every detail — from Hattori’s special heat treatment process to the finely contoured handle design and the perfect balance and ergonomics — reflects his uncompromising craftsmanship.

The latest FH “NOAH” Series features Hattori’s newly upgraded VG-10 Clad Steel blade. The core is made of VG-10 high-carbon stainless steel, supported by outer layers of 420J2 stainless steel that enhance toughness, durability, and corrosion resistance while making re-sharpening easier. This clad construction maintains the outstanding sharpness, edge retention, and smooth cutting feel that Hattori knives are celebrated for. Each blade is carefully hand-ground and hand-sharpened to achieve a thin cross section and a fine cutting edge (HRC 60–61).

Hattori wanted to proudly show the advantages of the “SAN-MAI” (“3-layer”) blade construction technique and Japan’s most reputable stainless steel, VG-10. The wide exposure of the VG-10 core near the edge gives the blade a distinctive, solid appearance — conveying both strength and refined elegance. We believe our customers will enjoy the exceptional cutting precision and smooth, sturdy feel of these knives, which is quite similar to a mono-steel knife due to the careful selection of tough 420J2 stainless steel cladding.

The final sharpening process is done manually by Hattori to ensure a precise and consistent 50/50 edge shape, this means your Hattori knife can cut foods smoothly and precisely immediately after opening the box.

For the handle material, Master Hattori carefully selected some elegant natural Olive Wood, which has a unique and beautiful woodgrain pattern and a warm, rich color. The perfect shape and contours of the handles further showcases Hattori's fine custom handwork. "Natural beauty" and "elegance" are the words that best describe the new Hattori FH Series Gyuto with Olive Wood Handle.

Mr. Hattori believes a comfortable and well balanced handle is just as important as a good blade. Accordingly, he not only carefully considers the external looks of the handle, but also the durability. Since untreated natural wood can shrink and develop cracks during long-term usage, Hattori carefully selects each block of wood and boils it in wax for 3 hours to stabilize it. After stabilization, the block is cut in half to produce two pieces that have matching woodgrain patterns, these 'scales' are then affixed to the knife tang and hand shaped. When I first gripped one of these handcrafted, natural wood handles, I immediately noted the warm, silky feel and comfortable contours; I hope you enjoy them as much as I do.

The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.  

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Master Hattori’s passionate apprentice, Mr. Nagatomo, concentrates continuously when he is handcrafting the perfectly shaped handles of the Hattori FH series knifes. Utilizing at least 10 different manufacturing steps and several pieces of equipment, I observed him carefully shape and contour the handle by hand. With each process, the handle is gradually refined until it reaches the perfect shape and finish. I felt all of these steps and processes were necessary. Indeed, it takes time to achieve the Hattori Quality.
