For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left handler can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
There's a ton of good stuff about this knife. The blade is very thin behind the edge and the distal taper takes it down very fine at the tip. Balance is great - for me it's right at the pinch grip. The octagonal handle is nicely finished and a noticeable step up from the standard D shape. The edge arrived very sharp - easily push cutting thin paper, but it really woke up after a few passes on a loaded strop. I don't expect to have to sharpen this for a while but I'm looking forward to seeing what it's like on the stones. The included saya is quite basic but looks classy and feels smooth after a few coats of mineral oil. I'm already thinking about another ZDP knife from this collection. Service from Koki was prompt and friendly as always. Great purchase!
