After years of the collaborative work with the Knife Forums "In the Kitchen" members and the premier knife maker, Mr.Ichiro Hattori, we are proud to introduce our first JCK Original, FH Series Hattori / Forums high end Chef's knives.
Hattori FH Series knife is produced in very small batches to ensure a high level of quality and performance. Every detail in design and manufacture has been taken into consideration from the special heat treat process, to the hand contoured handle and to the balance, ergonomics and profile of each knife.
The blade is made of VG-10 Cobalt Steel (HRC60 to 61). Even though it is simple appearance, we can feel the Hattori’s detailed works high level of craftsmanship from finely hand sharpened and polished blade.
For the handle material, the Black Linen Micarta was chosen for durability with solid stainless steel bolster and rivets. Each handle is hand contoured to fit your hand comfortably, and the full tang is tapered down for the perfect weight balance.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

I LOVE my Hattori Santoku knife so much I bought a backup in the event anything happens to it. It is my go to knife for everything. I've had it for more than 10 years and I am a total believer in this brand. I gave it as a gift to my brother, who is now a huge Hattori fan, as am I. Please don't ever change.
I purchased this about 1 and a half months ago, and wanted to try it out for a bit before making a review. Overall, the quality and craftsmanship is excellent. Cutting with it is a breeze, its super sharp upon using and has made cutting difficult vegetables such as kabochas pumpkins, carrots, and tomatoes much more easily. However, the area where the handle and the blade meet is too sharp, and causes my index finger to get cut often, since I'm trying to hold it closer to the tip of the blade. That's the only downside. But we had a Shun before, I can see this Hattori being infinitely well worth its cost and better quality in comparison. The Shun constantly chipped despite me being very careful with it, even a few weeks down the line. This Hattori santoku is now my go-to knife and I really enjoy using it, minus the getting cut part. I'll have to smooth it down somehow.

I've been using an Hattori Forum Santoku and Petty for at least 7 years. They are exquisite in balance, sharpness and general feel when using. I like them so much I recently bought a santoku knife as a gift for my son.
