At end of the year 2019, we released the first models in the "Blue Clouds" series: a TsuchimeHammered Kiritsuke Petty and Kiritsuke in AUS-10. Since then, our Blue Clouds knives have become one of our Bestsellers because of the their overall quality, excellent fit & finish, moderate price and stylish, practical design.
We have received many of positive comments about our Blue Clouds knives, including a special request to make a Carbon steel version of the Kiritsuke knives. Now, in the Spring of 2021, we are proud to introduce and finally release our newest Blue Clouds knives, which have Nashiji ("Pear skin") textured, Blue Steel No.2 blades and a beautiful, wavy forge weld line.
The new "Blue Clouds Series" Blue Steel No.2 knives have a smooth Matt Blade Finish and Forged Nashiji texture — an innovative approach that produces very consistent and reliable results, especially when combined with the skilled hand work and finishing work performed by our smiths and craftsmen. The Mirror Polished, Blue No.2 Carbon Steel blade core is clad with low maintenance Stainless Steel and has a stylish, practical Kiritsuke blade shape (Similar to a multi-purpose Santoku or Bunka knife) that is well suited to a wide variety of cutting tasks. Heat treated to HRc. 61 to 62, the double bevel edged blade has a 50/50 symmetrical grind.
The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the Nashij textured, Blue Steel No.2 Kiritsuke blade. These knives also feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets.
The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.
I have been a cook for 11 years and a chef for 4. I've bought all of my knives from JCK. Recently purchased the Blue Cloud series knives for my home, specifically for my wife to have good blades while I'm at work. Edge retention is great, balance is good on both sizes, plus the larger size is big enough to take on large chopping projects but light enough to not fatigue the wrists. Always a great buy with great customer service.
The knifes are beautiful made. They’re very comfortable to hold and work. The Petty is perfect for fast and precise cuts for example garnish. The Bunka is perfect for daily task in the kitchen. Because of the handle it is on the heavier side but for me as a chef I prefer that. As for the sharpness, they are very sharp out of the box. But for my use I sharpened them a little more. I use both daily for now over a month in the kitchen. I would buy both knifes again prise and made wise.
The knife set its one of the best value for money of the website. Quality its overall very good and knife its simply amazing .
FIrst time a client of JCK site, but I think it's not the last time for sure. I've got my order very quickly. Really impressive service and really fast delivery from Japan to France. These pair is a genuine beauty! From the handle to the tip. I would never imagined I'd love Nashiji finish so much. The knives' balance is perfect for my taste. The Bunka is very comfortable in my hand. However the spine of the petty knife seems a bit too rough at its angles when I use a pinch grip, could be rounded more. Both of them were not very sharp out of the box (just as stated in one of the previous reviews). They were not completely dull, but they were quite far from what you'd expect from Japanese knives. And Bunka has a little imperfection at the very tip. Just a kind of a small oval shaped dent. Hence my 4 stars evaluation instead of 5. These knives are close to be great, but there is still some space for improvement.
