The Japanese Deba, which is also called the Hon-deba (Literally, “true deba"), is traditionally used to clean and fillet whole fish, but it is also commonly used for breaking down and dressing poultry and other meat with small bones. The significant weight of the Deba is desirable because, with adequate care, the sturdy heel section of the knife can be used to cut or chop through the bones found in small and medium-sized fish and poultry.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.
Wow this knife has been great for me. Easily fileted some snapper with hardly any meat left on the bone. The knife had a good weight so I was able to break through the spine with no problems. Great knife, great value.

The knife is really sharp - usually I don't like to play games with knifes, but it's my second Japanese knife and I could not resist tomato test. Mostly I bought this deba for fish and birds, but when I received parcel it was pleasure to cut some different food. It is heavy (as hon deba must to be, traditional deba can be heavier), it has comfortable handle, so if you are waiting for a good deba - the knife is what you want. Also great thanks to JSK for service and delivery - it's not easy to deliver to Russia due to covid restrictions.
