Kanetsugu Pro S knives have Katana Handle motif of hollow 18-8 stainless steel handles seamlessly fitted to their blades. They are very sanitary, non-slip, comfortable, light weight and well balanced. The blades of the Pro S series have a custom-designed convex blade profile that provides outstanding cutting performance and thin cutting edges, which are suitable for fine cutting tasks. The blades are made from AUS-8 Molybdenum Vanadium stainless steel and are corrosion-resistant, tough, strong and easy to re-sharpen. These characteristics make these knives very suitable for first-time users of Japanese knives, but cost-conscious professionals will also appreciate them.

The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Great knife for the money.

    I bought this to use in a busy kitchen where people sometimes use the knife closest to hand... The fine cutting edge means that it's super sharp and takes no time to touch up. I'd recommend this knife to anyone who's after good value for money.

    Great knife

    Very sharp and light. I like the "full metal" build that makes it very easy to clean. The grip with wet hands is also very good for such design thanks to the pattern on the handle

    Excellent gift for amateur/causal cooks

    The shipping of the knife was flawless, as this store is know for. I chose this knife as a Christmas gift for an amateur cook who doesn’t readily know how to take of high end knives, so it’s solid body will make cleaning simple. The quality of the blade I won’t get to test myself but I am sure the simple handheld draw-sharpener they use will be sufficient to keep the edge sharp.

    Great Product, Even Greater Service.

    Great! Firstly, the product is simply superb. This is my very first Japanese knife and based on my experience with it, I will come back for more. Since I am a novice, I can't give technical or pro feedback about the knife. To me, it just felt light and nimble. I haven't yet got around to using it properly (I just got it today) but based on a few trials this afternoon, I'm sure I will enjoy this knife very, very much. I did put it to the paper test - sliced through newspaper without effort! It was almost like slicing through tofu, with just a little more resistance. Secondly, a special shout-out to Koki-san, Chief Administrator of JapaneseChefsKnife.Com (JCK). My payment met with some technical difficulties at the beginning, for which Koki-san was extremely apologetic, although I must say it was no fault of his. After that, he was constantly on the email with me and his responses were quick, efficient and helpful. We sorted out the issue, the payment went through, and my knife came a few days later. Koki-san even threw in a thoughtful souvenir as a goodwill for the slight difficulties. This level of attention and excellence in customer service is just outstanding! Five stars are not enough to rate the product, or the service. I will not hesitate to recommend friends to JCK. Keep up the great work Koki-san. Arigatougozaimasu.
