From my first glance of this beautiful knife, I knew it should be called "Gekko”, or 月光, which means "Moonlight" in Japanese. From every angle, the Gekko knife reminded me of the way that the shape and light of the Moon changes each night.
Gekko knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. They feature a hand sharpened and hand honed VG-10 stainless steel blade core that is clad on both sides by a 15-layer Damascus stainless steel (HRc. 60-61. 50/50 symmetrically ground double beveled edge).
Gekko knife uses a full-tang construction, and has Mahogany wood handle with a stainless steel bolster and handle rivets.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.
The overall finish is equal to a knife at four times the price, extremely sharp out of the box and of course the usual excellent service from JCK. What more do you want at this price point.

Great work knife with good edge retention. I’m an executive chef of a nationwide catering company I was looking to have something nicer than a house knife but not so expensive that I’d be afraid to take it out. Currently has a month of prep on it and still will shave the hair off your arm.
