The Japanese Deba, which is also called the Hon-deba (Literally, “true deba"), is traditionally used to clean and fillet whole fish, but it is also commonly used for breaking down and dressing poultry and other meat with small bones. The significant weight of the Deba is desirable because, with adequate care, the sturdy heel section of the knife can be used to cut or chop through the bones found in small and medium-sized fish and poultry.

My first Deba. It is hefty and big. Finish on the handle is nice and smooth. On the spine I would have preferred a smoother finish especially on the edge so it feels less sharp. Did some stone work to make it more gentle. I have worked with it on whole salmon. Factory sharpness is acceptable but with some work on a finishing stone it cuts it like butter. It is one of the better value Debas around. The service and support for Koki and the team gives confidence of ordering from them in the future.

I’m having a lot of fun breaking down fish and poultry with my new Deba. I’ve also used it for vegetable cutting with great results, it feels good in my hand, has a nice weight, and keeps a great edge. I look forward to seeing how to patina builds up on the blade. Beautiful knife!
