From an experienced craftsman’s viewpoint, Sugimoto’s traditional handcrafting methods and their custom convex edge geometry, their hand-sharpening are the secrets to their outstanding cutting performance.

Since we first started to offer the Sugimoto Chinese Cleavers, over 10 years ago, our professional customers have praised them for their fine cutting performance and quality.

We often receive requests and inquires about small, easy to maintain, high-quality Chinese Cleavers, so we recently decided to begin selling the Sugimoto CM-4030 Small Chinese Cleaver, with Special Stainless Steel blade.

The blade is made with a special stainless steel, which provides very good cutting performance, edge retention and rust resistance.

The Natural Wood Handle has a comfortable rounded shape, two carved grooves that improve grip, a durable Stainless Steel bolster and balances the weight of the blade very well.

The Sugimoto CM-4030 Chinese Cleaver is the smaller size with lighter than standard for comfortable balance and weight.

The Chinese Cleaver is a highly versatile general-purpose kitchen knife that can be used to slice, chop, mince, scrape, and even crush ingredients. The tall blade of the Chinese Cleaver enables it to be safely guided with the knuckles of your free hand when 'tap chopping’, ‘push cutting’, or ‘pull cutting’. This makes it possible to cut large fruit and vegetables, such as cabbages, easily and safely.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

  • Before starting to use the knife, please wash it with water for cleaning up.
  • Please do not put this knife in the dishwasher, please hand wash.
  • Please do not leave this knife in water or wet condition for a long time.
  • After using, please hand wash it and wipe it clean and dry with soft clothes. (Includes bolster and handle part)
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, hard foods such as lobster and crab which have hard surface.
  • *e recommend re-sharpening the knife using Japanese whetstones, when it gets dull.

    Great knife and good service from jck!

    Pretty sharp and all in all what I expected. Nice and light for its size and even though the handle is not that long, it handles well. Be aware that you will need to sharpen the blade more often if you use it regularly. The steel has a high hardness and the blade is quite thin on the edge (as it should be ;)) so you will soon have small chipping on the blade. The one missing star is for the handle quality. As another reviewer wrote: there is a gap between the blade and the handle. If you wash it carefully this is not a big issue but could be better.

    Perfect small cleaver for everyday use. Only gripe is the 1-2mm gap where the handle meets the blade so not as hygenic to use long term and possible potential for water to seep in.

    Sugimoto CM-4030 Small Stainless Chukabocho

    Good to very good overall fit and finish. The item arrived with noticeable scratch or ding on left side of blade. Not much distal taper and cross section taper appears to be imparted by grinding. A viable choice for home cooks with small hands desiring a stainless blade. I wish Sugimoto would produce the excellent No. 6 cleaver in forged stainless or better yet, forged stainless clad high carbon!

    As expected! Perfect!

    The knife is a “heavy” knife and it’s weight it more on the blade, but that is to be expected from a cleaver knife. I would recommend this knife! Ps: I have small to medium hands, so if YOU have big hands or thick hands, double check if the handle is big/long enough for you before purchasing this knife.
