This knife comes with 50/50 double bevel edge geometry for both right and left handed use. For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.
I have had this for around 10 years. When I bought it from JCK, it was solid blue steel. It is a very sharp and robust blade. The steel is hard and holds en edge for a long time. This is a heavy Chinese cleaver being 3mm thick, over 9.25” long and 4.5” tall. A little thick for hard vegetables (wedging) but great for mincing, fine julienne and as a general purpose chef knife. I sometimes use it to butcher while king salmon as well ; it “flies” through the ribs. My only complaint is the fitting of the handle. Gaps between the tang and the scales are filled with epoxy. I wish Mizuno makes a thin vegetable chipper to pair up with this chopper.
