“Wild” and “dynamic” are the words that best describe this Saji VG-10 custom Damascus kitchen knife.
The blade is made with a VG-10 core forged Nickel Damascus Stainless steel (HRc. 62) and they feature a traditional Japanese Hamaguri-Ba (Convex) blade grind that provides remarkable cutting performance.
The layers of white-colored Nickel steel in this Damascus blade contrasts strongly with the stainless steel layers to produce a powerful wavy Damascus pattern that truly sparkles. To further accentuate the wild appearance of the Damascus, Master Saji decided to use natural Stag Bone to produce some very tasteful handle scales and a pinned brass bolster, which will age beautifully.
The Bunka is a general-purpose kitchen knife that used to be just as popular as the Santoku, but has become less commonplace in recent years. With its tall blade, the Bunka knife is particularly suitable for cutting vegetables or fruit and the triangular tip area is particularly useful for detailed work and cutting fish or meat.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

When I first got it the black Damascus was too sticky, and I buffed it with a 3m belt and it was all better

This is exactly the knife I want, a bunka with VG10 damascus blade, Stag bone handle and hand made by Takeshi Saji. It's beautiful and very versatile. The purchase experience was great with fast international shipping. I am trying to get a few more Takeshi Saji knives (in other knife style) with the same steel and handle.

The ornate Damascus patterning is immaculately forged, and terminates in a wicked sharp VG-10 blade that will easily handle all professional tasks. Despite a hardness of HRc 62 I have encountered no issues with chipping or rolling, nor found the blade overly brittle. Edge retention is excellent - one month later a light polish has brought back world-class precision. Mr Saji is a legendary craftsman and I thank him for providing a world-class knife at an affordable price, that I will use every day for many decades.
