At end of the year 2019, we released the first models in the "Blue Clouds" series: a TsuchimeHammered Kiritsuke Petty and Kiritsuke in AUS-10. Since then, our Blue Clouds knives have become one of our Bestsellers because of the their overall quality, excellent fit & finish, moderate price and stylish, practical design.
We have received many of positive comments about our Blue Clouds knives, including a special request to make a Carbon steel version of the Kiritsuke knives. Now, in the Spring of 2021, we are proud to introduce and finally release our newest Blue Clouds knives, which have Nashiji ("Pear skin") textured, Blue Steel No.2 blades and a beautiful, wavy forge weld line.
The new "Blue Clouds Series" Blue Steel No.2 knives have a smooth Matt Blade Finish and Forged Nashiji texture — an innovative approach that produces very consistent and reliable results, especially when combined with the skilled hand work and finishing work performed by our smiths and craftsmen. The Mirror Polished, Blue No.2 Carbon Steel blade core is clad with low maintenance Stainless Steel and has a stylish, practical Kiritsuke blade shape (Similar to a multi-purpose Santoku or Bunka knife) that is well suited to a wide variety of cutting tasks. Heat treated to HRc. 61 to 62, the double bevel edged blade has a 50/50 symmetrical grind.
The Sophisticated Royal Blue-Purple Pakka Wood Handle Scales beautifully match the Nashij textured, Blue Steel No.2 Kiritsuke blade. These knives also feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets. The Pakka Wood is strong, durable and resists both water and shrinkage.
The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.

The Bunka is a general-purpose kitchen knife that used to be just as popular as the Santoku, but has become less commonplace in recent years. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.
