Glestain Special Petty (140mm to 210mm, 3 sizes)

Availability: Normally ships the same day

Glestain knives are easily recognizable due to their distinctive design and styling, which is unlike other ‘ordinary’ knives: The unique rectangular-shaped dimples that are ground in to one side of the blade, the pleasant balance and weight of the knife and the secure grip provided by the comfortable handles.

The blade of Glestain knife is made from a special stainless steel called ACUTO440 (HRc. 59) and features unique dimples, which provide extra cutting performance and reduce the likelihood of food sticking to the blade.

This knife has comfortable black pakka wood handle and a stainless steel bolster, which provides good blade balance and a fine grip.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

Great service, fast ship from a LONG way away, precisely what I ordered

It's hard to locate Glestain knives locally and JCK had the knife I wanted in stock. The order was easy, shipment was remarkably swift from Japan to the USA and the Glestain offset petty knife was in perfect shape when it arrived. I highly recommend JCK for knife orders!

Can't go wrong with these - Just order 2 or 3!

I already have the middle sized version of this. The 140mm version is possibly better. However both are completely unusual, but very, very versatile and are outstandingly sharp - I would have ordered the 210mm version if I didn't already have a 15+ year old UX10 Misono Gyuto which is still perfect - Ordered from Koki too - I'm not on Koki's payroll but the products and service are faultless- 11 out of ten

Glestain Special Petty - excellent little knife!

The Glestain Special Petty allows extra board clearance for your knuckles which makes the knife so much more verstatile. Perfect for veg prep as well as for those times when you don’t need a big knife but need to use to board. It’s getting a lot more use than I expected. Very sharp out of the box too!

    Glestain 180mm Special Petty

4 days to ship from Japan to the UK is outstanding! The knife itself is very strange looking but its performance out of the box is utterly unbelievable. Push cutting overripe tomatoes paper thin is so easy, onions the same. I'm just a home cook but I've shown this to some friends who are professional chefs and they love it. I'm trying to self justify buying the 140mm one now - Watch this space! Please DO use this site as the products I have ordered over the last 15 years or so are absolutely faultless - Well done Koki.

    Glestain Special Petty Knife

Glestain are the only knives I know of which actually reduce food product, both vegetable and meat, from sticking to the blade surface. The knife looks a little unwieldy but works very well. I use it for everything from garlic to potato.
