Mizuno Tanrenjo Akitada Hon Kasumi White Steel No.2 Wa Petty knife is completely hand sharpened, polished and finished by especially skilled artisans, which results in extra edge sharpness and a more refined level of finish.

Its blade is made with soft iron and Hitachi Shirogami #2 (White Steel No.2) which is heat-treated to HRc. 62-63. Shirogami #2 is a high carbon Japanese steel that is renowned for its purity and is easy to sharpen to a very fine edge that can also retain its sharpness for a long time.

This knife is fitted with a traditional Japanese ‘D-shaped’ magnolia wood handle with a water buffalo horn ferrule / collar and also includes a matching magnolia wood Saya (Sheath) for safekeeping.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

    This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

    • Please do not put the knife in the dishwasher machine for cleaning.
    • Please do not leave the knife in water or wet condition for long time.
    • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in dry place.
    • This is an extremely sharp knife. Please use special cares in using and storing it.
    • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
    • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
    • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

      A good knife that requires a lot of maintenance

      This is a great knife, and thanks to the fantastic service of the vendor I got it with a left-handed D-shaped handle. The shirogami #2 needs a bit more frequent sharpening than my other shirogami #1 knife, but the bright side is that it does not micro-chip so easily. The handle needs treatment with oil (I used linseed oil) to become more water resistant, and the knife is very prone to rust, because it is not clad with more stainless steel. But if you take care of the knife, the knife will reward you by taking care of you.

      I had previously purchased a stainless steel gyuto from JCK, and the experience was excellent. I practiced with this knife for three years to test whether I can muster and sustain the discipline required to maintain blades of such exquisite craftsmanship. Following that trial period I felt confident to handle and maintain a carbon steel blade from JCK. My inventory of knives at this point required a petty, and soon a usuba. I purchased the petty from JCK, which arrived waaaaaaaay sooner than expected given the routine delays in deliveries we experience, so kudos to JCK for facilitating such straightforward shipping and delivery logistics! The knife is as described (which was the case with my previous JCK purchase). This instrument performs in a manner that exceeds expectations, and demands respect. These qualities of the instrument translate to rethinking the approach to cooking and the preparation of food, all of which is an incredibly positive experience. I have yet to sharpen this blade, despite near daily use for ~2 months. But as with my gyuto I feel confident in maintaining the edge on this blade when that time comes, and that the edge will hold for much longer based on the properties of the steel of this white steel no. 2 blade. All in all, JCK is the company I shall return to in seeking to fill out my knife inventory.

      Best Wa Petty knife I have ever owned

      I own many knives and the Mizuno Tanrenjo Akitada White Steel No.2 Clad HK-WP Wa Petty is the closest thing to perfect. It is the sharpest and most useful knife in my collection. If you want a go to knife try this Wa Petty.
