What a beautiful knife, surgical sharpness, Ives like an extension of your hand. Can’t do without.
Sharp and smooth easy to control balance
This was my first time buying a Japanese knife, and I spent an inordinate amount of time researching them. I am glad I went with JCK. As everyone notes, this store and its service are impeccable. DHL Express delivery from Seki, Japan to Los Angeles in less than 48 hours is close to instant gratification. I ordered the sakura/cherry handle, but received red sandalwood handle instead. JCK emailed back quickly when I asked, and apologized for the substitution, which is perfectly fine (and actually an upgrade). The damascus steel is gorgeous, and I've had not problems with usual maintenance. It is so much sharper than my previous paring knife, that I have to relearn my paring skills to avoid cutting my thumb ( I guess I got used to using it as a cutting board with a dull knife). I now prefer the Japanese handles to German ones, and bought three more knives from JCK!
This paring knife is comfortable, agile and sharp. The “sheep’s foot” style with little rocker is idea for paring. The point is more than adequate for piercing. This is the handiest paring knife I have used.
My husband and I both love using this knife. It is a beautifully made knife, very sharp, and comfortable in the hand.
