This time, Takeshi Saji chosen to work with SRS-13, a high quality Powdered High Speed Tool Steel produced by Sanyo Steel Company. Master Saji has great confidence in the supreme cutting performance, edge retention and corrosion resistance offered by SRS-13 because it has a fine microstructure and a very rich Chemical Composition, including a high percentage of Carbon, similar to that of Japan’s Premium Aogami Super Hagane (Blade steel).
With a beautiful mirror polish and unique 網細工 “MESH" design Tsuchime texture, Master Saji’s newly developed SRS-13 Custom Knives have an appearance unlike any of his other knives.
The attractive shiny SRS-13 blade core of these knives contrasts strongly against the textured, soft stainless steel outer cladding layers. The hand-contoured Black Linen Micarta Handle provides a secure grip and extra durability. Unlike the bland machine-produced handles of regular Western-style knives, when we grip the handles of Takeshi Saji’s knives, we can feel the warmth of the craftsman’s vision for his entire handle making process - They are truly something special to own, hold and use. The custom handcrafted handles perfectly match his handcrafted, Traditional hammer forged blades, which have much more ‘soul”. Master Saji’s knives are also fitted with a polished stainless steel bolster for improved handle durability and blade balance. How is Takeshi Saji able to make such great custom handmade handles ?
As you may know, Takeshi Saji has produced a wide variety of knives during his long career, including a large collection of Custom Hammer Forged Traditional Outdoor Knives. So, just as he spent many years perfecting his hammer forging techniques, he has also invested a lot of time and energy in to perfecting his techniques for handcrafting custom knife handles. Among the other Japanese knife makers, this experience and knowledge has made Takeshi Saji and his knives particularly distinctive and noteworthy.

A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right-handed and left-handed use.
Please Note: In general, Japanese Kitchen Knives are designed for right hand use and their blades have a relatively strong convex grind on the right-hand side and relatively weak convex grind (almost straight) on the left-hand side. However, double bevel edge knives with a 50/50 grind can be used by both right-handed and left-handed people without any problems.

The knife that I have been looking out for a long time; it was very interesting to me. The only thing that confused me was its handle. As it turned out it was not in vain. The blade of the knife is somewhat hybrid of a utility knife and a mini-chief – just what I needed. I wanted a small knife for universal work with a wide blade. The knife is perfect for these purposes. Nevertheless, for such a small knife, the butt is a little thick. I almost have no complaints about the blade and its shape, it is ideal for my purposes. However, the handle is certainly something. I am not a professional, but no matter how I take this knife - all the time I need to take into account its handle’s protrusion. The only grip in which everything is fine is to take the knife like a scalpel. Yes, given the sharpness of the blade, this is quite reasonable, but for moderate strength work and routine work, it will be tiring. In summary, this is a very controversial knife. Here, the blade of perfect shape and performance was mistakenly combined with a beautiful but very blurred designers handle. Whichever grip you use – when changing the position of the hands, the 4th and 5th fingers will be uncomfortable to rest against the handle protrusion, which reduces the comfort of work. Only respect for Master Saji keeps this handle from being vandalized - if it were a $20-30 knife, I would immediately take out my grinder and remove that strange hook at the end that seriously interferes. I do not know if this would improve the situation with the convenience of the knife, but if the knife were cheap, it is not a problem to buy a new one. To my opinion, I think that design has triumphed over functionality in this model. Which is very sad for a Japanese knife. However, I would rate this knife as a 4/5 for its idea and blade.
I already owned one knife by Takeshi Saji and realized it would be two when I saw this petty. It’s perfectly balanced, very comfortable in the hand, and holds a magnificent edge. Dang lovely, too.
