The "Blue Clouds" knives each feature a simple design, this time, we are introducing a heavy-duty “Chopper” with a practical High Carbon Stainless Steel blade, which has good rust resistance and durability.
The main focus of this Chopper Knife was practicality, so we chose a Simple Brown Pakka Wood Handle, which is durable and resists both water and shrinkage. Please note that the fit & finish of the handle and tang is a little rough and the Pakka Wood scales are usually slightly oversize, so they might not fit evenly with the tang. The manufacturer's craftsmen intend to provide a practical, secure grip for this heavy duty “Chopper” knife and they also wanted to produce this special purpose knife for a reasonable price, consequently, they deliberately decided to make these fit & finish compromises.
In Western-style cooking, people often need to cut hard foods and meat, such as chicken or fish, which might contains bones. Unfortunately, most Japanese knife manufacturers have stopped producing this type of special purpose knife due to low customer demand and a widespread decrease in the number of skilled craftsmen. Thankfully, the craftsman team in Seki City has continued to make these practical Choppers, which are perfect for heavy duty use or heavy-handed users.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.
