This knife has a cutting edge of Hitachi Blue No. 2 high carbon steel that has been forge welded with soft iron / steel for increased toughness and ease of re-sharpening. Blue Steel No.2 is a very reliable Japanese high carbon steel that is often used for high-grade Japanese traditional-style knives due to the combination of cutting performance, edge retention and ease of re-sharpening that it offers.
This knife comes with a comfortable octagonal magnolia wood handle with black water buffalo horn ferrule / bolster, and includes a matching magnolia wood Saya (“Sheath”) -with black pakkawood saya pin- for safekeeping.
The Ai-deba has a very similar blade profile to the Hon-deba, but has a somewhat narrower blade and is thinner and lighter in weight. When compared to the Mioroshi Deba, the blade of the Ai-deba is typically taller, thicker, and more substantial. The relatively thin blade means that the Ai-deba is far better at slicing fish than the Hon-deba. It is ideal for dressing and filleting medium-sized fish with soft bones, such as mackerel. The Ai-deba has become increasingly popular in the Japanese market in recent year, and it is often chosen instead of the Hon-deba because people find the comparatively lightweight blade easier to handle.

Japanese Traditional Style “Wa-Bocho” knives generally come with Single bevel edge for right-handed use (the opposite side of blade is ground flat with slightly concaved shape). The reverse grinding left-handed version is also available at 50% extra of regular price. (Sorry for much extra! Due to a small demand for the left-handed version in Japan, it is costly to run a special small production from the beginning step and production is very very limited.)

This may be JCK’s best series of FRKZ knives I’ve bought. The Blue 2 Ai deba is built like a premium brand product. Excellent FNF, sharp right out of the box, and the Blue 2 steel is remarkably corrosion resistant and easy to sharpen. I use this with Hamo eels mainly, and those who’ve worked with Hamo know that nothing but the sharpest blades will do, especially when it comes to removing that pesky spinal bone that’s attached to the fin (it’s like pin heads stuck along a long line of fine hard bones). This knife makes quick work of it. I’ll buy a 210 version of it i there was one but it looks like I’ll be getting the 195mm one as well. Super product!
