      Since we have started introducing and selling Hattori Forums FH Series knives in year 2007, its quality, performance and craftsmanship of Hattori FH knives have been well recognized among professional and serious home chefs.

      As you know, there are so many processing steps to finish one knife such as grinding, heat-treating, polishing etc etc. Each process is very important, and any neglects affect to the final quality and  performance.  It is indeed difficult to see and judge the good knives from the outside looks. However, since our company started working with Hattori in 1980fs, we have been seeing Hattorifs works and policy to prove it.

      Nowadays, there are many cheap and low quality knives in the market.  It was not the easy thing to keep and continue his own and original way of the making process for long time.     The Grinding Master, Kiku Matsuda is now the Hottest Custom Knifemaker in Japan for his Free Hand grinding skill to create unique multi-ground re-curved hollow + Hamaguri-ba (convex edge) blade. You can see his background and current products at our JKD website Kiku Knife Collections.

    He has been producing Tactical knives for SWAT Teams and Law Enforcements for over 10 years, and his knives are now very popular for collectors, hunters, campers in all over the world as the most durable and sharp knives with the soul and spirit of ancient Japanese Samurai.

    This is his first Chef knife made of same tough steel OU-31with his famous Hamaguri-ba edge and etching process. The OU-31is a micro fine steel for durability and high performance, and is hardened to HRC62-63. He has made only 6 pcs, and sold 3 pcs. at Taiwan Knife show last week. Japanfs certified and traditional Forge-smith, Master Takeshi Saji is now 67 years old and is aggressively devoting his times to teach and pass his experienced technique and knowledge to the next generation and successors. At the same time, he is focusing to make his custom kitchen knives in these years. In fact, his name is getting much well known in oversea market and having positive response among serious users.

  Since introducing ZDP-189 Damascus Custom Line 2 years ago, we have received many positive responses for itfs modern design, and super cutting performance of ZDP-189 blade. Now, they are many userfs favorite knives. 

  However, the delivery time is always problem with ZDP-189 Damascus Custom Line. Sometimes we had to wait over 6 months for the new batch. We regret the ZDP-189 Damascus custom line wonft be ready to deliver in time for this Holiday season.

   But here, we have good news !!  We are very glad to introduce another Fine Masterpiece from Sanetsu, that is the VG-10 Multi Color Damascus Custom Line.  At this year's Seki Knife Show, we found similar knives to the  ZDP-189 Damascus Custom Line, but different looks, different inlay works of custom handle at Sanetsu table. Mr. Tsukahra has kindly explained the details and characteristic features of these new models. 

  Finely mirror polished beautiful Damascus blade is made of VG-10 core with forge layered Nickel & Stainless Damascus steel, hardened to HRC60 to 61. 

  Same modern&elegant design of custom hand made handle comes with unique and decorative, custom inlay works. Mr. Tsukahara explains the difficulty and the time consuming works for the complicated handle making process.  Making even and same shape of handle for each side, and natural curved and rounded shape via hand contouring process. After this process, the handle become his ideal shape, makes secured grip and well balance. Custom Inlay works also requires precise hand working process for the perfect fit&finish. 

  There is another big difference from existing ZDP-189 Damascus Custom Line. Red, dark green and black color of beautiful and nice accent, Multi Color Copper Damascus layers are appealing from the bolster and handle butt, which makes something special and totally different design from others. 

  For this holiday season, we luckily received special models which were produced for only one time,  only 1Pc or 2Pcs for the display in the showroom and for exhibiting at the knife show.

Master Nagao Masterpiece of Honyaki White Steel #2 Gyuto and Sujihiki

    Master Futoshi Nagao, the owner of Hiromoto company has now turned to 75 years old.  He is one of famous and great experienced craftsmen in Seki City Japan.

  Our office is very close to Hiromoto company, therefore, I often have a chance to see his knife making processes and listen to his knife making history and policy.  It is always exciting for me to learn many things from experienced craftsmen. In fact, Master Nagao is one of our favorite and respected craftsmen. Many of our customers are fans of his knives, especially Hiromoto Aogami Super Series knives that are popular Carbon steel knives among serious users and professionals.

   Unfortunately, we regret that he does not have a son or an apprentice who continues Hiromoto companyfs business. 75 years old of experienced Craftsman Master Nagao is starting to reduce his working recently and he has already discontinued some models because of his old age.

    However, Master Nagao is very passionate craftsman yet who is very aggressive for challenging the new methods to seek and achieve something better.  For example, he has been still learning and trying his best to create the Superb Honyaki knives with White Steel #2..  By reducing his main jobs, he said he can now spend more times and concentrate to make what he has been dreaming. We totally understand he is a true craftsman who loves knife making, and believe his fine works remain forever.

    Master Nagao continues making popular Carbon steel knives gHiromoto Aogami Super Seriesh and beautiful Damascus knives gTenmi Jyuraku Damascus Seriesh until he will be completely retired (until he can continue making knives and keep his good health for knife making).  We really wish his good health and good life, and more of our customers enjoy the outstanding performance of Hiromoto knives.

 One day in the year 2013, when I visited Hiromoto Company, Mr. Nagao was concentrating to producing Honyaki Gyuto. At that time, it seems he was feeling very well because he finally found the best method for the Honyaki making process after a lot of trial&error. (he has been trying Honyaki Gyuto for over 30 years now). I totally respect his passion and effort for making knives and I also realized how deep and how difficult the knife making is, even over 50 years of experience craftsman still struggles, trying to find something.

    Now in April 2014,  we have just received a great news from Master Nagao that his  masterpieces of Honyaki White Steel #2 kitchen knives are finally coming up. This is the moment we have been waiting for long, so I hastened to visit his workshop to see them.

    Master Nagao explains the Honyaki is the Japanfs original kitchen knife from long time ago, producing in same methods of Japanese sword (Katana) making. As you know, Japanese swords are made in unique and traditional methods, that creates an amazing cutting performance as well as a beauty of its appearance. Master Nagao believes the ancient Japanese craftsmen and forge-smiths had to find out their own ways and ideas to make better swords and edged tools, as it was difficult to get any knowledge from the abroad due to the isolated small island. The result was the something special and unique in their characteristics and performances that are different from European and  Western Knives. Honyaki knife is a good example of the Japanfs original produced with traditional and unique methods.

    Honyaki knife is made of a solid one-piece steel material. For quenching process,  Master Nagao sticks to the water quenching to maximize the steelfs characteristics and remarkable cutting performance. He believes the Water Quenching is the best way to stabilize the precise chemical organization of the steel for durability with sharper edge and longer edge retention. However, it is a very difficult process that requires special technique and skill. Even with his long experience and skilled Master Craftsman, he says he sometimes fails, if not concentrated with his all nerves. He showed me some of the failed Honyaki blades with cracking..

    Master Nagao has been searching the best result of the Water Quenching with lots of struggling and trial&errors, and finally found the importance of a proper temperature of the water and subtle amount of clay put on the blade to adjust the hardness of each part of the blade. He also studied and obtained the best quality clay to be used for Honyaki Water Quenching. This clay process is called gTsuchi-Okih as seen on the Japanese sword making, and features beautiful gHamonh patterns near edge. I realized how important every detailed Honyaki process is and admire his pursuit mind to create the finest Honyaki blades.

    Master Nagao has a long time experience with Hitachi White Steel #2 (Shiro-Ko #2) and he believes it is one of the most practical Carbon Steel material. It is a pure Carbon steel material that makes remarkable cutting performance and ease of re-sharpening.  Many years ago, Master Nagao had special order request from Japanfs oldest hotel gTeikoku Hotelf (Imperial Hotel in Tokyo). Mr. Murakami, a head chef of the hotel asked him to make best Honyaki Gyuto knives using Hitachi White Steel #2. This was a start of the struggling and hard work for Master Nagao to study Honyaki process. After a lot of trials&errors and many years of practicing and researching, Master Nagao has finally came up with his original Honyaki White Steel #2 Gyuto that made Mr. Murakami happy and satisfaction.

    Many people are still not familiar with Honyaki blades because of its high price range or some people hesitate to own and use Honyaki which is often told to be more difficult to re-sharpen or using for its high hardness. However, Master Nagao says good Honyaki knives are the most practical Carbon steel knives with easier re-sharpening than you think, and will serve you years of outstanding cutting performance and durability with proper maintenance.

    Long experienced and great craftsman, Master Nagao has been working hard to turn out fine line of his original Japanese Hocho (kitchen knives) for decades. He says this Honyaki line is his culmination products from his long careers, and is preparing to retire sooner or later for his age. I know the Honyaki knives were one of the goals he wanted to achieve, but do hope it will not be his final masterpiece.

  In year 2012, we have received this beautiful and interesting Damascus Kitchen Knife from Mr. Nagao.  Tenmi Jyuraku Gingami No.3 Damascus Series Limited Edition.

  As you may already know, Mr. Nagaofs first priority for knife making is to make great sharpness and cutting performance of practical knives. He believes these are the most important elements for the good knives, and these important characteristics are achieved by his professional hammer forging process and experienced heat-treating process.



  In addition to the above Nagaofs standard,  he has tried to feature the beautiful Damascus art for this new product. You will see more fine and detailed Damascus layers patterns in below half part of the Damascus blade, while the above half part has wider and bigger layers patterns.  Also Mr. Nagao has made different Damascus patterns for  the opposite side blade by changing the way of hammering process. He said this has happened accidentally, but we like this beautiful and unique Damascus pattern, that is different from other existing Damascus blade knives.

   In order to solve the delivery problem, we have recently found another manufacturer who produces similar beautiful Damascus knife.  At the beginning, I thought it is a copy of Gekko knives, but after we listened the craftsmanfs explanation how this new Damascus knife is made, we recognized this knife exceeds Gekko knifefs quality standard with the extra attention and care to the manufacturing processes. After our study and testing, we have decided to start carrying this beautiful new Damascus knife with the name of gGekko Kiwamih (Gekko Premium).

   Gekko Kiwami knife features a special Quenching Process called gSalt-Bathh, which makes more stable and the best result after each time of quenching process, Gekko Kiwami knives are thoroughly Salt-Bath Quenching process.  It is difficult to do this quenching process with large batch, therefore this method of quenching process is often be used for custom knife or high quality, high price range knives.

When we compare to Gekko Kiwami and Regular Gekko knives,  we can recognize more natural taste and looks of Tsuchime Hemmering pattern and the blade is nicely polished and beautiful Damascus layers pattern is more visible and attractive.

          Master Saji Custom Damascus Chinese Cleaver

  Master Craftsman & Forgesmith, Takeshi Saji has been making traditional hammer forged knives for decades. His uniqueness is to add modern technologies, materials and designs, while keeping the traditional knie making methods. So far, JCK has introduced some of his unique Chef knives.

  This time, he came up with a beautiful and very unique Custom Damascus Chinese Cleaver made of VG-10 core forged with layered Nickel Stainless Damascus steel blade with Traditional Hamaguri-Ba (Convex edge) blade profile.  Master Saji says this is the first forged Damascus Chuka-Bocho, and it was hard to hammer forge and heat treat this large blade.

  Chinese Cleaver is very versatile cooking knife for many cutting tasks with large and square blade. His art of beautiful Custom Damascus layers can be more impressive and we can feel its powerful craftsmanfs soul from its large size blade.

 "Honed Beauty" by Master Blacksmith, Tsukasa Hinoura



        We often heard a good rumor and reputation of the outstanding forge-smith, named "Tsukasa Hinoura" in Sanjo City, Niigata Prefecture, another Japan's cutlery producing district of traditional "Echigo" Forged Knives.

        Having our business based in Seki, we have a meeting frequently with major knifemakers in Seki to discuss a production schedule, new products and general matters. While talking with Mr. Hattori, he spoke very well of Mr. Hinoura's work. Since he is a knifemaster who never compromises and admires, I'm bit surprised to see that he has other knifemaker to admire and respect, but I understand only the top level craftsmen can respect each other and share the same feelings. We've heard same story from the knife expert and metallurgist, Mr. Onoue in Seki. He mentioned that Mr. Hinoura's knife is the best in the forged knives both in function and beauty. He has made metal analysis and testing of all kinds of knives, and proved that Mr. Hinoura's knife was in top ranking in every aspect. It can stand hard uses without warping and breaking.

        We are excited to hear these good things from both Seki knife specialists and are eager to introduce the Hinoura knives to our JCK customers as the high-end line.  At the Seki Knife Show in October, we had a chance to see his knives in hands and discuss about his backgrounds and his insistences on knife making. After a month, we finally got 4 knives we have selected at the show.

 
 

        Echigo Blacksmith, Tsukasa Hinoura is the third generation of Blacksmith family. He inherits his family's trade name "Ajigataya", but is also creating his original knives under his "Tsukasa" brand. He is aggressively searching his own way to express his skill and passion to the blades.

        Our first impression of his knives is the "Honed Beauty", and we can recognize his skills, times and passions behind it. It is the perfect knife with beautiful seamless line and form, no sharp corners, no distortion, no gaps etc. He devotes tremendous times from start to finish one knife for every detail.  Unlike some other forgesmiths, he never uses modern machineries and finished clad steels developed by the lastest technologies, because he believes the old fashioned traditional hand works of from forge cladding, Hizukuri forming to a water tempering  can only use his experienced skills and express his soul and passion into the blades.


        For the final finishing, he does a hand honing using the several different grids natural whetstones and spends at least two hours to polish and sharpen one blade. He says the whetstone hand honing is the best to get the sharpest edge of carbon steel blade. This is also very important work, not only to enhance total beauty of the blade apperance and function of the blade performance, but also to check the condition of the steel. He can judge to see if the steel has been treated properly by this stone polishing.   It is the essence that these time-consuming and never-compromising processes make his knives super-outstanding among many forged knives in Japan. When you hold his knife, you will see what we mean, a perfect fusion of the forged carbon steel with clad soft iron on the polished edge line with mysterious sparkling that shows a functional beauty c.

        His basic blade pattern is called gKitae-Jih (bn), using Shirogami No.2 Carbon Hagane steel core wrapped and layer-forged with wrought irons, and is available in polished finish and blackened finish. To start with, we have selected two new evolved patterns in blackened finish. These new distinct Damascus patterns are from his forging technique to give you a visual joy as well as the highest level of craftsmanship.
