Red Orca Custom Hand Made Forged Knives

   Kochi Pref in Shikoku is another famous place for traditional forged knives with 400 years of experience and history. (Tosa Uchihamono)

  Blacksmiths who have inherited the traditional techniques continue to make high quality blades to these days.

  Among such craftsmen, one stands out for his unique and finely forged blades. His name is Yoshihiko Akitomo, the Custom Knife Maker of the popular RED ORCA brand in Japan.

  Akitomo is a third generation blacksmith who inherited his predecessorsf knowledge and skill and established the RED ORCA brand. In answer to our international customers' strong demand, we bring you the powerful and massive-looking RED ORCA handmade knives.

  The beautiful and delicate Damascus blade has an Aogami No.2 core forge-layered (Tan-Setsu) with soft iron. The Hamaguri-Ba (convex) blades (from the RED ORCA machete-forging and making techniques) are thicker and heavier than usual Japanese kitchen knives, but equal in sharpness and durability.

  The handle is made of Black Canvas Micarta known for its excellent durability and resistance to shrinking. The Nickel Silver bolster and the Rivet are the fine accents contributing to the balance of the whole. The slim and long tapered handle fits perfectly the strong and massive-looking blade, making these knives the suitable size for a big man's hand.

  As you may already know, there are several places in Japan known for fine knife making.

  One is our location, Seki City, the most famous knife-making city in Japan. Seki City has been producing a variety of cutlery including Japanese swords, kitchen knives, pocket knives, hunting knives and many others throughout its history. Among kitchen knives, Seki City is especially renowned for making professional quality Western Style knives such as Petty, Santoku, Gyuto and Sujihiki combining modern technology and craftsmenfs exquisite hand making skills and techniques. To give one example, the Hattori FH Series, JCK Original KAGAYAKI and Misono items are all from Seki City, and are among our highly recommended top quality Western Style Knives.


  Sakai City, Osaka is another famous place for making Japanese Traditional style knives such as Yanagiba, Usuba and Deba (single bevel edge knives). Each of these traditional knives is crafted through a hammer forging process and requires much of the craftsmenfs time and skill to make. We are especially impressed with their outstanding skill during the sharpening process (using a Water Wheel Whetstone). Japanese traditional style knives made in Sakai City are
the tool of choice of professional Sushi chefs who demand extra high cutting performance in preparing fresh Sashimi and Sushi.

  Our recommended products from Sakai City, Osaka are the Fu-Rin-Ka-Zan Hon Kasumi Series. Mizuno Tanrenjo

  Takefu City in Fukui Prefecture also has a long tradition of knife making and Takefu is famous for traditional hammer-forged knives called gEchizen Uchihamonoh.


  Takefu City is getting a lot of attention today for its knife making. The Takefu Knife Association is making a lot of effort to have been many passionate young forge-smiths coming to Takefu to master the craft of traditional forged knives.  

  These are our recommended knives from Takefu City: the Kagayaki Aogami Super Custom Damascus Wa Series, Mr. Itou  R-2 Custom Damascus Series, Takeshi Saji Unique Custom Knife Collections by Takeshi Saji who is popular forge-smith from Takefu city.

  Finally, Sanjo City in Niigata is also famous for its traditional hammer forging and knife making. The techniques and skills seen in the forging process are most highly recognized and the very talented special forge-smiths in Sanjo City have produced fine masterpieces of unattainable level. One example is the Tsukasa Hinoura Custom Knife Collection.

  Today we present these new traditional hammer forged knives from Sanjo City.

  The brand name of these new knives is Blue Moon (Œ= SEIGETSU).


  Repeated traditional hammer forging and fine hand sharpening combine to achieve the unique Japanese taste of the Tsuchime Black forged (Kurouchi) Blade. Blue Steel #2 core is sandwiched with soft stainless steel for easy maintenance.

 The unique Tsuchime dimples and dark color blade surface look like the Moon and its Craters. Each knife has a unique texture of Craters.

   After Master Nagao retired last year due to his old age and lack of successors, we have received many messages from his fans expressing regret at the news and messages recognizing his achievements and praising the high quality of his kitchen knives.

   We were also shocked to hear the news about Master Nagao's retirement, but we know that his passion and craftsmanship will continue to live in his knives and will never be forgotten.

   His strong devotion to creating the perfect sharpness and to researching the best way to achieve it made a very strong impression on anyone who knew him.

   Tenmi Jyuraku Aogami Super Series was his steel kitchen knife masterpiece fully embodying his vision. The Tenmi Jyuraku Damascus series was a series of great Damascus knives combining style and sharpness, characteristic of Nagao's unique works.

   Towards the end of his long career, Master Nagao just finished the VG-10 nickel Damascus Gyuto 210o.

   He managed to create a Damascus pattern like never seen before by incorporating his entire forging skill acquired throughout the years. The pattern of gentle waves beginning at the top of the blade turns into a more irregular and detailed Damascus pattern close to the edge. Knives with such an unusual Damascus design are rare, as this is an original pattern created in Master Nagao's unique forging process.

   Gyuto 210o, the most popular tool with both home cooks and professional chefs is now ready.

   Perfect for the end of the Nagao knife collection, these knives are beautiful and filled with his unique ideas. This last work vibrates with Master Nagao's unending search for the perfect sharpness.

  Since we started our business, we have often received inquiries and requests from our customers for special steel knives such as ZDP-189, Cowry X.

  Hitachi ZDP-189 Powdered High Speed Tool steel (Carbon 3%, Chromium 20%)  is attractive, and very special, but still mysterious and rare on the market.

  When we saw the ZDP-189 steel knives for the first time, our first impression was they could rival or equal in excellence the Cowry X steel which Master Hattori uses for the KD Series Cowry X Damascus knives.

  We now have the chance to work with Sukenari forge-smiths to produce these ZDP-189 Forged Wa Gyuto knives and we are very glad to be able to introduce them to you.

  Sukenari is great forge-smiths who proactively take on new steels. We understand and respect their knife making policy as they are making every effort to satisfy professional usersf needs and demands.

  These ZDP-189 kitchen knives were made through a difficult and time-taking forging process and hand sharpening process. They are the result of many years of ZDP-189 knife production technology and of the rich experience Sukenari has devoted.

  If I needed to choose a knife to use in daily food preparation, I personally think cutting performance and edge retention would come at the top of my priority list. Moreover, if the knife didnft require much additional care and attention in terms of daily maintenance, it would make my decision that much easier.

The additional Nickel layers emphasize the white layer pattern and the craftsmenfs special mirror polishing results in a unique and elegant Damascus blade.

SHIKI High End Custom Damascus Series

      Mr. Masui , he is now 67 years old of experienced, innovative knife craftsman.

      He has over 45 years of knife making experience. However he is still very active and aggressively challenging to create something new and something different in designs and ideas.

      He is one of the rare craftsmen who can design own knife with own idea, and realize it all by himself.

      This time, Mr. Masui has decided to make High End Custom Line for SHIKI brand knives, which means he needs to devote all his energies, skills and times for producing these new Custom High End SHIKI Damascus Knives.

      For distinguishing from other SHIKI selections, Mr. Masui has paid more attention to select the best materials, and spent much more times for every making process and detailed hand working process.

      For the handle, Mr. Masui researched and managed to import and use much rare and unique wood material called gCalifornia Buck Eyeh from U.S.A.

      This wood makes beautiful natural texture with mixture of grayish and calm tan coloring. Each wood has a different and unique texture and coloring, giving you a feeling to own the special "one-of-a-kind" knife.

      The Stabilized California Buck Eye wood handle is nicely hand contoured for perfect balance and comfortable grip.  Gorgeous 3 Mosaic Pins are the elegant accent for the unique wood handle.


      Unique grey/silver coloring and mat finish of VG-10 Nickel Damascus Blade is also matching well with the California Buck Eye Handle. Mr. Masui has struggled and finally achieved this unique mat finishes Damascus blade. He has tried several acid etching times and processes to test and find the best appearance of the Damascus layered textures on the decent unevenness blade surface. He has then added lightly blasted finish and shinny nickel layers. I'm sure you will love this outstanding Damascus blade finish 

      Mr. Masui did not forget to pay his special attention to the bolster too, and added extra process to make it matching matt finish and calm silver color for total beauty.

      For every part and details, Mr. Masui did not make any compromise and we are proud to introduce these SHIKI High End Custom Damascus Series knives for those who seek a pleasure of owning and using in addition to the functions.

      Each blade has hand chisel engraving logo in Kanji meaning gSHIKI  Hiroaki madeh.

SHIKI High End Custom Damascus Series

                                    Beautiful Amber Streaks Water Buffalo Horn Handle Version


     We are always searching something unique and rare handle materials from all over the world. This time, we found and imported some Water Buffalo Horns with beautiful Amber Streaks from India. When we showed it to Mr. Hiro Masui, he liked the unique texture of amber color steaks, and decided to use it for his SHIKI High-End Custom Damascus Series. However, he has concerned about any possible shrinkage, warping, cracking problems on this natural material with a moisture and temperature condition after long use. In order to protect these problems, and make it durable, he has made special treatment to stabilize it.


       Among the imported Water Buffalo Horns, he has selected best parts and materials that show a good streak textures on both sides.  Each handle is hand contoured to fit with your hand comfortably, and has a natural beauty of the amber streak with three Mosaic Pins (new complicated design) and Green Spacer. 


       For matching blade, he has used VG-10 Nickel/Stainless Damascus steel and polished it to a unique Mat finish in Grayish color. You will enjoy the unique patterns and textures on both the handle and blade.

At the same time, he is focusing to make his custom kitchen knives in these years. In fact, his name is getting much well known in oversea market and having positive response among serious users.
