It has been over 6 years since we have started to work with Master Gotohfs fine craftsmen team to found and establish the Kagayaki brand. Kagayaki Basic Series, KAGAYAKI VG-10 Series, and KAGAYAKI CarboNext Series, all these fine Western style knives are now among our popular and favorite knives, due to the high quality standards. Master Gotohfs fine craftsmanship and dedication to maintaining a high level are obvious.

For the next generation, new market needs, and for satisfying a wide variety of experienced usersf needs, Master Gotoh has been polishing his skills further to create the new Damascus kitchen knives. When I heard for the first time that Master Gotoh is going to craft Damascus kitchen knives, I was very excited and couldnft stop trying to imagine what these Damascus knives would be.

 The result was beautiful Damascus knives with excellent fit & finish, created by reliable quality work and attention to every detail, during every step of the making process. As I imagined, they are attractive and have the outstanding quality of professional Damascus knives.

 He has selected the R-2 Special Powdered High Speed Tool Steel for the Damascus core steel. R-2 is reputable special Powdered High Speed tool steel that offers remarkable cutting performance, edge retention and good rust resistance. (HRC 63) 

The additional Nickel layers emphasize the white layer pattern and the craftsmenfs special mirror polishing results in a unique and elegant Damascus blade.

Additionally, Master Gotoh had a great idea for distinguishing these knives from other existing Damascus kitchen knives. Created in collaboration with a Master forge-smith, the blades are made through the traditional hammer forging process for maximizing steelfs strengths. The rest is Master Gotohfs reliable and experienced crafting and finishing work.


Now the beautiful and high quality KAGAYAKI Gekido R-2 Nickel Damascus Series knives are available.


The nicely contoured, fine round shape of the Linen Micarta Handle ensures perfect grip and great durability.

Gekido means Big Movement, Big Change, or aggressive movement towards new challenges. We admire the professional and fine craftsman spirit taking on new challenges and we believe KAGAYAKI Gekido Damascus knives will excel on the current Japanese knife market as one of best and fine Damascus kitchen knives.    Unique, beautiful and reasonable price range of Gekko Damascus knives have been one of the most popular knives among our selections.

   Affordable price range, yet high quality and high cutting performance. Gekko knife is not only beautiful and unique, but also have many other reasons why Gekko knives have been so popular for long period.

   However, due to far more increased demands than they can produce, we regret for having a delivery problem for these beautiful knives since the beginning of the year 2013.

   In order to solve the delivery problem, we have recently found another manufacturer who produces similar beautiful Damascus knife.  At the beginning, I thought it is a copy of Gekko knives, but after we listened the craftsmanfs explanation how this new Damascus knife is made, we recognized this knife exceeds Gekko knifefs quality standard with the extra attention and care to the manufacturing processes. After our study and testing, we have decided to start carrying this beautiful new Damascus knife with the name of gGekko Kiwamih (Gekko Premium).

   Gekko Kiwami knife features a special Quenching Process called gSalt-Bathh, which makes more stable and the best result after each time of quenching process, Gekko Kiwami knives are thoroughly Salt-Bath Quenching process.  It is difficult to do this quenching process with large batch, therefore this method of quenching process is often be used for custom knife or high quality, high price range knives.

   Fit&Finish and Excellent Polishing process.
   
When we compare to Gekko Kiwami and Regular Gekko knives,  we can recognize more natural taste and looks of Tsuchime Hemmering pattern and the blade is nicely polished and beautiful Damascus layers pattern is more visible and attractive.


   Handle is made of Black Pakka Wood with stainless steel bolster. Both Handle and Bolster have rounded shape for comfortable grip.

   Hand sharpened and hand honed VG10 core cutting edge forged with 15 layered Damascus stainless steel.

Master Saji New Concept R-2 Custom Damascus Series

Japanfs certified and traditional Forge-smith, Master Takeshi Saji is now 67 years old and is aggressively devoting his times to teach and pass his experienced technique and knowledge to the next generation and successors. At the same time, he is focusing to make his custom kitchen knives in these years. In fact, his name is getting much well known in oversea market and having positive response among serious users.

For this time of new products, we have been requesting Master Saji to make something more suitable and practical for oversea userfs needs and also something different from the existing models. After spending much times for the research and trial & error with his all experience of knife making for oversea market, Master Saji just came up with these new Concept R-2 Custom Knives.


    The Up-Swept R-2 Custom Damascus bade that has unique random layered Patterns so called gDiamond Damascush. His new random and detailed forging process + acid etching and polishing processes have created this unique sparkling diamond patterns in uneven surface.



   Slanted, Polished Stainless steel bolster makes distinctive stylish design and well balance. Total 6 kinds of unique looks and beautiful layered linen micarta handle is perfectly hand contoured and shaped for secure grip. Linen Micarta is one of most practical handle material for the durability and resistance to water and shrinkage.

     Simple and Moderate are the words that best describe these new Damascus Kitchen knives, gSazanami h. Sazanami means gsmall and calm wavesh. Sazanami Damascus Series have a simple and moderate Damascus layerered pattern, just as their name suggests.   Today, we see many kinds of Damascus blade kitchen knives. Some of them have more aggressive Damascus layers and some of them just have more Damascus layers, which gives them an appealing exterior appearance.

Master Nagao Masterpiece of Honyaki White Steel #2 Gyuto and Sujihiki

    Master Futoshi Nagao, the owner of Hiromoto company has now turned to 78 years old.  He is one of famous and great experienced craftsmen in Seki City Japan.

  Our office is very close to Hiromoto company, therefore, I often have a chance to see his knife making processes and listen to his knife making history and policy.  It is always exciting for me to learn many things from experienced craftsmen. In fact, Master Nagao is one of our favorite and respected craftsmen. Many of our customers are fans of his knives, especially Hiromoto Aogami Super Series knives that are popular Carbon steel knives among serious users and professionals.

   Unfortunately, we regret that he does not have a son or an apprentice who continues Hiromoto companyfs business. 78 years old of experienced Craftsman Master Nagao is starting to reduce his working recently and he has already discontinued some models because of his old age.

    However, Master Nagao is very passionate craftsman yet who is very aggressive for challenging the new methods to seek and achieve something better.  For example, he has been still learning and trying his best to create the Superb Honyaki knives with White Steel #2..  By reducing his main jobs, he said he can now spend more times and concentrate to make what he has been dreaming. We totally understand he is a true craftsman who loves knife making, and believe his fine works remain forever.

    Master Nagao continues making popular Carbon steel knives gHiromoto Aogami Super Seriesh and beautiful Damascus knives gTenmi Jyuraku Damascus Seriesh until he will be completely retired (until he can continue making knives and keep his good health for knife making).  We really wish his good health and good life, and more of our customers enjoy the outstanding performance of Hiromoto knives.

 One day in the year 2013, when I visited Hiromoto Company, Mr. Nagao was concentrating to producing Honyaki Gyuto. At that time, it seems he was feeling very well because he finally found the best method for the Honyaki making process after a lot of trial&error. (he has been trying Honyaki Gyuto for over 30 years now). I totally respect his passion and effort for making knives and I also realized how deep and how difficult the knife making is, even over 50 years of experience craftsman still struggles, trying to find something.

    Now in April 2014,  we have just received a great news from Master Nagao that his  masterpieces of Honyaki White Steel #2 kitchen knives are finally coming up. This is the moment we have been waiting for long, so I hastened to visit his workshop to see them.

    Master Nagao explains the Honyaki is the Japanfs original kitchen knife from long time ago, producing in same methods of Japanese sword (Katana) making. As you know, Japanese swords are made in unique and traditional methods, that creates an amazing cutting performance as well as a beauty of its appearance. Master Nagao believes the ancient Japanese craftsmen and forge-smiths had to find out their own ways and ideas to make better swords and edged tools, as it was difficult to get any knowledge from the abroad due to the isolated small island. The result was the something special and unique in their characteristics and performances that are different from European and  Western Knives. Honyaki knife is a good example of the Japanfs original produced with traditional and unique methods.

    Honyaki knife is made of a solid one-piece steel material. For quenching process,  Master Nagao sticks to the water quenching to maximize the steelfs characteristics and remarkable cutting performance. He believes the Water Quenching is the best way to stabilize the precise chemical organization of the steel for durability with sharper edge and longer edge retention. However, it is a very difficult process that requires special technique and skill. Even with his long experience and skilled Master Craftsman, he says he sometimes fails, if not concentrated with his all nerves. He showed me some of the failed Honyaki blades with cracking..

    Master Nagao has been searching the best result of the Water Quenching with lots of struggling and trial&errors, and finally found the importance of a proper temperature of the water and subtle amount of clay put on the blade to adjust the hardness of each part of the blade. He also studied and obtained the best quality clay to be used for Honyaki Water Quenching. This clay process is called gTsuchi-Okih as seen on the Japanese sword making, and features beautiful gHamonh patterns near edge. I realized how important every detailed Honyaki process is and admire his pursuit mind to create the finest Honyaki blades.
