When we have
completed our long time project of the JCK Original Hattori Forums FH Series
in June, 2007, we have asked Mr. Hattori to make some limited
editions to cerebrate the 2 years collaborative works with
Forums members. We thought about the combination of Hattori KD
series and Forums designs, and ordered him to make some FH-1
Parer knife with his Cowry-X Damascus blade.

After patiently
waited, it finally came out for only eight pieces just on the
Xmas day. It took two and half years, just the same times we
spent for the Hattori Forums project from the beginning. It is
a cute and gorgeous Parer knife you want to own and treasure
in your kitchen table. To make it very special, I have asked
Mr. Hattori to write a special words and date in Japanese
calligraphy on the Kiri wooden box, in addition to his
signature. In front of me, he wrote one word of "Kokoro" that
means "Heart" or "Mind", and he explained me that his knife is
created with his mind and soul together. Thanks to Mr.
Hattori Santa for his fine work.
We wished to have more, but this is only 8
limited edition. There is a serial number of No.1 to
8 on the box in Kanji calligraphy, so we will ship from No.1
on the first come and first served basis.

ZDP-189 Custom High End Series Damascus

of the ZDP-189 series from Sanetsu
As you know,
the ZDP-189 is the highend powdered high speed tool steel as
well as the Cowry-X, but unfortunately, it is getting very
rare to use for knives in the market, due to the recent price
increase, high minimum requirement and longer lead-time to get
this steel.
JCK has been introducing several
ZDP-189 knives exclusively from Sanetsu, who is now a only
maker working for ZDP-189 knives in Seki, but they have
announced to discontinue the ZDP-189 knives after used up
their current invetory of ZDP-189 steels. It's sad to hear of
their decision, but using the existing steels, we are
pleased to introduce new addition of Gyuto 270mm. Beautifully
mirror polished blade with elegant nickel and stainless
Damascus design. Matching large Cocobolo wood and Black Linen
Micarta handles are hand contoured for sure and comfortable
grip with mosaic pins.
We recommend you to
obtain one of the ZDP-189 knives while the supply lasts, and
experience and enjoy the amazingly sharp and incredible
cutting performance.

Damascus kitchen knives are back with improved handle
finish!
JCK has offered his
line of R2 Damascus knives before, but we had to reject many
knives which did not meet with JCK quality standard. (of
course, we sold the selected good ones before)@The blade
itself was okay, but the problem was a handle finish with some
gaps and unbalanced. After months of study, he came up with a
perfect handle finish, nicely hand contoured grip with no
gaps. JCK is pleased to re-intoruduce these improved
knives.

Mr.
Nagao's Ιγb’ Superb Forged Shirogami Gyuto

We have been working very
closely with Mr. Nagao of Hiromoto in these years (his factory
is only one minute away from our office), and have introduced
his Highend line of "Tenmi Jyuraku Series" such as "Aogami
Super Series", "Gingami No.3 Series" and "Damascus
Series".
The other day, I got to know of a very
interesting story from Mr. Nagao about the high grade Carbon
steel knives he has worked for very hard. It was a long time
ago, before coming up with the current Tenmi Jyuraku Aogami
Super and Gingami No.3 series, he has been struggling to find
out the ideal steel and the best way to maximize it's chemical
character to the extream performance. After the repeated
"trial and error" in achieving his policy and goal, his final
choice of the steel was Hitachi "SHIROKO" (White Steel #2). He
has visited Hitachi Yasugi works in Shimane-Prefecture many
times to analyze and study each chemical content and it's
character. Yasugi is famous for making Tamahagane from the
sand irons in traditional "Tatara" method.
The "SHIROKO" is a pure high
carbon steel that contains 1.20 Carbon and less impurities,
but he did not want to use it as it is like other conventional
knives, and has installed
a huge hammering machine and a furnace facility
to challenge a "Hizukuri", traditonal Katana making
process to taper down and shape the blade by hammer hot
forging. He said the most difficult point for Hizukuri
was how to keep right temperature (850 - 900C) during the
entire forging process to prevent warping and
breaking. Naturally, it is cooled down from the
surface, so he figured out to put same Shiroko blanks on
both sides, and then remove them after forging (it was hard to
peel off, he recalled). Annealing is the next important
process for high carbon steel, not to loose the carbon on the
surface. It is heated uniformly at right temperature for
several hours and then cooled down in the straw ashes to make
the carbons spheroidized for toughness against chipping and
breaking. All of these are time consuming proceses with a
state-of-art technique, resulting a Superb Forged Shirogami #2 (Ιγb’ρjwhich is proudly
die-stamped in Kanji on the blade under the "Tenmi-Jyuraku"
logo.
The "SHIROKO" is the best choice of many
professional and advance users who care and resharpen their
knives often, because it can get the sharpest edge easily with
whetstone and the utmost performance as it was intended and
made by the skilled craftsman. It is a faithful steel to the
owner and can be your sharp cooking companion with proper
maintenance.
Mr. Nagao has produced a limited
quantity of this superb hand-forged "SHIROKO" Gyuto
knives in San Mai Clad and Solid White Steel #2 blade. Both
knives come with full tapered tang Black Pakkawood handle with
extra strong brass/stainless bolt rivets and solid
stainless steel bolster. It has a well balance and weight for
professional
use.

After
years of researches for the high-end Chef knives, JCK has
teamed up with Sanetsu to introduce modern design ZDP-189
Damascus series. An another JCK Exclusive!
ZDP-189
is known as the toughest cutting tool steel developed by
Hitachi's state of the art equipment and technology at
their Yasugi works located in San-In district famous for
the"Tatara", high purity iron sand production for the
legendary Japanese swords. ZDP-189 is a powdered metal aloy
steel with higher Carbon (3.00) and Chromium (20.00) to
out-perform ATS-34 in durability and hardness.
Mr.
Tsukahara of Sanetsu says the ZDP-189 powdered steel is too
hard to grind and polish. It can be hardened to over HRc.67,
but he has tried to maintain the hardness to HRc.63, which he
thinks is the right hardness for ease of re-sharpening
and prevent chipping and breaking for these Japanese thin
kitchen knife blades. Using this ZDP-189 in core cutting
steel, clad with layered nickel and stainless Damascus
steel finished in beautiful mirror polish and wavy designs.
You will also see the matching Damascus marking of "ZDP-189"
on front of the blade and his logo "Kajin Saku" on the
back.

He
thought about the matching handle with this outstanding
blade, and has used stainless Damascus steel bolsters for both
ends and an elegant mosaic rivet in the center with five
nickel silver pins with three different exotic handle
materials for your choice of Cocobolo wood, Maple Burl wood
(stablized with purple resin) and Dupont Ivory Corian
. It is ergonomic designed to fit comfortably with
your hand, even for a large hand (most of the Japanese kitchen
knives have small handles designed for Japanese use), hand
contoured and tapered end with bolsters.
This
high-end Custom line comes with three essential blade
styles of Petty, Santoku and Gyuto, and is now available for
only 3 pcs. of each model and handle variation. The
production is very limited for this lots of hand working
custom line, so it will take at least 45 days for the next
small batch.
This is a
piece of art of the master craftsmanship, and will be a great
addition to your collection.

It is made of super fine powdered steel alloy with
high carbon (3.00) and high chromium (20.00) at HRC 64 to
66. This is the next generation steel

Kitchen Knives from Traditional Craftsman Mr. Saji
Master
Craftsman, Takeshi Saji has been making traditional Japanese
style Hunting knives with the traditional hammer forging
process for over 40 years at Takefu-City, Echizen district.
You can see his forged knives at our JKD website at JKD
SAJI.
At our
request, he has just produced three different sized Gyuto
knives for JCK customers, using VG-10 core forged with layered
Nickel Stainless Damascus steel blade and Stag Bone
handle with solid Brass Bolster. You will enjoy these
traditional craftsmanship and cutting performance with the
forged Hamaguri-ba edge.

The Traditional crafsman,
Mr. Takeshi Saji is famous for hammer forged blades
(Uchi-Hamono). He is mainly producing traditional Outdoor use
knives for hunters, Campers and Fishermans. He did not forget
to add his outdoor mind for his Japanese Traditional style
kitchen knives and put a Stag Horn for the handle. This is
from Japanese Deers called "Ezo-Jika" living in northan
Hokkaido.

Master Saji has worked with a Bamboo craftsman, Mr.
Masatake in Kyushu district of Japan for the something
different handles. The result was a
very unqiue and real Japanese touch "Bamboo Handle
Wa-Bocho". It is a carefully selected Bamboo roots, that
are handle polished and lacquered with wooden
bolsters on both ends and Nickel silver pin. Each handle
is proudly signed by Mr.
Masatake.
