Original P KAGAYAKI Basic (ES) Series
About two years ago,
right before we start this "Kagayaki" project, I had a chance
to see the kitchen knives produced by Mr. Gotoh who runs a
small workshop here in Seki-City of Japanese cutlery center.
It was a normal standard style kitchen knife that can be seen
anywhere, but I have noted the sparkling blade finish,
something special from his professional skills. He told me his
passion for the policy to every detail of the manufacturing
step. I'm very impressed with his professional attitude to try
to make something better, and have decided to develop this
"KAGAYAKI" series with him. "KAGAYAKI@P"
means "Sparkling" in Japanese.
We did not think about something special design for this
project, but searched for something special in quality and
finish based on the standard shape and design, because we can
better show you the difference in the workmanship. JCK has
teamed up with Mr. Gotoh to turn out evolutional quality line
of new standard knives, that can be recommended with
confidence.
The V-Gold No.1 stainless steel blade, heat treated to high
HRc. 60, is hand finished to a beautiful sparkling with many
pre-processes. The gentle touch Black Pakkawood handle will
fit your hand comfortably. This work of art in the quality
control and cutting performance will bring you a joy of
cooking for the home use to a professional chef.
Mr. Gotou cares about the functionality
of the blade such as the geomerty, edge sharpness and
durability. He has been making fine knives with this concept
of high cutting performance for over 40 years. (His products
include many customers' brands of famous Japanese retailers
and makers).
In addition to the normal 70/30 edge bevel blades, we have
specially prepared 30/70 edge bevel blades for left hand
users. (80/20 double bevel edge of the Honesuki and Sujihiki
will cost more for left handed version. Manufacture requires
to make special shape of blade from the
begining).

What is KAGAYAKI ES
(Extra Sharpness) Series ?
We recently met the
experienced and good personality of craftsman in Seki,
who has been in kitchen knife business for most part of
his life. As many advance users and craftsmen
know, the final hand sharpening and honing process
by Japanese whetstone makes extra sharpness and
cutting performance. Also once the knife is sharpened by
whetstone for fine edge shape, it will be easier to make
re-sharpening process. (The blade edge can have
Sharpening Route after the Whetstone Sharpening
process.)
There are many advantages with KAGAYAKI ES
Series. We can especially recommend KAGAYAKI ES
products for people who requires extra
sharpness,detailed and precise cutting performance and
also for people who do not have good experience of
sharpening.
