 On our recent business trip to Takefu City, where is traditional knife making district for  the gEchizen Uchi-Hamono, we have found these interesting and unique Japanese Traditional Style knives in fine craftsmanship, and had a pleasure of meeting with the owner, Master Shimada. His factory has a long history specializing in producing single bevel edge blade Japanese Traditional forged knives.
 Master Shimada was so kind to show us the factory operation and products. We well understood his basic knife making policy to turn out the most practical and functional  knives with fine cutting performance and yet ease of re-sharpening. Therefore, the selecting a knifefs steel material is one of the important starts for his knife making. His best preference was the most popular and pure Japanese Carbon Steel, White Steel #2 (Shiro-Ko #2) for high cutting performance and ease of re-sharpening, so we agreed to use it for the single bevel cutting edge core, forge welded with wrought iron for JCK selection.


 This is our first chance to introduce the Kurouchi (Black forged) Japanese Traditional style knives, with unique Tuchime Hammering pattern.  We believe these economy price range of unique Japanese Traditional style knives will be a good addition to  the JCK Original gFu-Rin-Ka-Zanh selection.


 At my first glance, I was impressed with its unique Kurouchi blade and its beautiful color gradation. Black Forged Kurouchi part has unique Tsuchime hammer textures (Above half part of the blade), the grey cloudy color of Kasumi part (between Kurouchi part and the edge part) and shining silver coloring of polished edge.
 The handle is a D-shaped Magnolia wood with Water Buffalo horn ferrule.
 We recommend these economy price range of the Japanese traditional Single Bevel Edge Yanagiba and Deba for those who would like to try and see how efficiently it will perform, if you have never used a Single bevel edge Japanese traditional knives. Of course, it will be a great selection too for the experienced users and professional chefs for its unique and different appearance from the ordinal knives.

      Fu-Rin-Ka-Zan Kurouchi Shirogami #2
                   (White Steel #2) Wa Series

 Kurouchi blade (black-forged) is very unique as it represents natural Japanese taste and is a result of Japanese traditional forging and processing. Unlike the neat appearance of a polished blade, Kurouchi Blade has the natural taste and power of traditionally forged knives.

 We have worked with the black smith and craftsmen in Sakai City to create these Japanese Traditional Forged Knives gKurouchi Shirogami #2 Wa Seriesh.


 Each blade is individually hand forged and layered with Hagane core edge based on the ancient technology and methods of sword making. Each knife is completely hand forged out of Nan-Tetsu (soft iron) and Hagane (core edge steel) in the traditional Hizukuri methods (Tan-Setsu). The repeated hand hammer forging process removes the impurities of Hagane steel for extra durability and cutting performance.

  High Cutting performance of the unique Kurouchi blade is created by Hitachi Shirogami #2 (White Steel #2) sandwiched with soft iron.

 Sturdiness and good balance of this unique Kurouchi Blades are complemented by the matching D-Shape and natural wood texture of its Dark Red-Sandal Wooden Handle with Black Pakka Wood Ferrules.

 We have often received inquiries and requests for traditionally forged Carbon Steel Wa Gyuto and Wa Petty for their outstanding value for money.
