Akitada Ao Hagane Deluxe Series

This is the upgraded versions over the Hon Tanren Series, using Hitachi Aogami # 1, that is very rare to find in  the "Wa Bochou"  (Japanese Traditional style Chef's knives) due to the difficulty to work with for higher carbon  content with 1.30 ~ 1.40. It also contains higher Chromium (0.30 ~ 0.50) and Tungsten (1.50 ~ 2.00) at Rockwell  hardness Rc.62 ~ 63 for the durability and longer edge retention.  Each knife is hand crafted in traditional methods by the experienced Mizuno craftsmen, and is the work of  art for the discriminating professional chef's who demand highest performance knives. Master Mizuno produces Ao Hagane DX Series knife as their High-end line and has confidience its great cutting performance.
