New SHIKI Tsuchime (“Hammered Pattern”) Texture VG-10 Damascus Series Knife (HRc. 60-61) has a special mirror polished blade and hand contoured Linen Micarta handle scales.
To match the unique appearance of the beautifully mirror polished Tsuchime Damascus blade, Mr. Masui decided to use the “Black Pakkawood Handle Scales with Red Stripes”.
The Paring knife is useful for a variety of commonplace kitchen tasks, but it is primarily used for peeling and accurately shaping fruits and vegetables. This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.
We believe the quality and cutting performance of Japanese knives are the best in the world, and hope you enjoy fine craftsmanship and sharp edge with your new knife. With proper cares, every Japanese knife should be your special cooking partner for long times.
Important
This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

Enjoy the quality of this knife every time I use it. I first became familiar with Japanese steel when using their chisels in my hobby of woodworking. Now experiencing their excellent quality in the daily use of these knives is a pleasure.
It’s a blast to use it when you cut small things or have to make precision cuts. Would buy it any day again.
The knife fit and finish is brilliant and out of the box very sharp the only thing that I would like to have is the handle another 10mm longer for my Hand as the heel of the knife has a little birds beak which if you have small hands will not be a issue otherwise digs in to your palm
Paring knifes are the most used ones in our kitchen, so we have several. Everyone uses them many times a day. Despite this, I don't need to sharpen them that often. Shiki makes some of the most beautiful one you'll find anywhere, and they feel good in the hand. A Saya is, for us, a must of you're taking a knife out of the kitchen - even a paring knife.
Great shape and design. Very sharp, takes some traning to avoid the pointy tail compared to classical paring kives. A great deal.
