This Petty knife is extra special limited edition SHIKI knife. The special matt finish and silver-gray coloring R-2 Nickel Damascus blade.(HRC 62 to 63)
To match the impressive appearance of the R-2 Nickel Damascus blade, Mr. Masui decided to use beautiful natural wood texture of Thuya Burl Wood handle scales. The handle and the seamless stainless steel bolsters are contoured and polished by hand so that they are comfortable to grip and are nicely accented by a decorative mosaic pin and a black spacer.
A mainstay of professional Western kitchens, the Petty knife is a small general-purpose knife used for peeling, shaping, and slicing fruits and vegetables, chopping herbs, and making garnishes. The compact size and relatively narrow blade of the Petty knife mean that it is very nimble and controllable, thus it is ideal for making precise cuts.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.
We believe the quality and cutting performance of Japanese knives are the best in the world, and hope you enjoy fine craftsmanship and sharp edge with your new knife. With proper cares, every Japanese knife should be your special cooking partner for long times.
This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
I’ve learned that some Japanese knives, especially Damascus ones, are, first and foremost, works of art: if you are not especially careful when sharpening them, you will spoil them – I use an Edge Pro machine now. This one, is certainly a work of art and I use it on occasions but it has R2 at its core. I’ve had mine for years, its still super-sharp and I’ve not had to sharpen it. Shiki’s Black Dragons with burr wood, or California Buckeye, handles… when you hold them, turn them and look closely, they’re absolutely beautiful. This petty is especially so. When they come back into stock, I’ll grab another one immediately.
This knife is one of the most beautiful knives I have ever seen. The knife itself is strong and sturdy, perfect for delicate work and rough cuts too. The blade is incredibly sharp so do not use it for breaking bones. The balance is perfect. The full-tang has the perfect amount of weight in the handle to feel like a surgical implement yet still light enough for quick work. I was worried about purchasing a knife for 250 dollars that I have never held, and what I received was perfection. I could not have asked for a better petty. Master Masui could not have done better!
Lovely handle, beautiful damascus blade and a good value. Came with slight burrs on a couple spots on both edges, but it still make short work of garlic cloves and made very slim slices on tomatoes. You may have to touch up the edge on a high grit sharpening stone, but this petty is well worth it.
This knife was purchased for my son who is a chef as a gift. He had bought one from you a few years ago and I knew he liked your knives. He was very surprised and happy with the gift and told me he was still using his old one and loved it!
Wonderful, lightweight, sharp and a dream in my hand
