The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the mirror polished VG-10 Tsuchime Damascus blade and the knives have an excellent overall level of fit & finish and quality. The handle material is strong, resists water and resists shrinkage. The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.These knives feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets / pins.
We especially recommend our JCK Natures "Blue Clouds" Knives to customers who are considering buying their first Japanese knife and want to own a moderately priced, high quality, practical, attractive and very fashionable knife.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.
This is my first time using a Japanese style knife and it is definitely the best purchase I've ever made for the kitchen. I was used to very cheap knives and decided to splurge on this one. It is amazing and exceeded my expectations. It was very reasonably priced and came presharpened. The handle feels amazing (especially when dicing) and the blade is very sharp and allows for easier use than any other knife I've ever used. I use it as my everyday-use chef's knife and it works great for all of my needs. I recommend that any person wanting to spend a little more on a knife to buy this one- you will not be disappointed! It definitely is great for beginners like me.
I’m an unapologetic fan of Koki-San and his website which I’ve been using for over ten years. I bought their brand name JCK Natures Blue Clouds Series BCD-2 VG-10 Tsuchime Damascus Santoku 180mm (7 inch) as a gift for one of my young Chefs birthday. As a first Japanese knife it has proven ideal. It’s double bevelled ( so no intimidating sharpening requirements) very sharp out of the box and the colour is beautiful. It does come with its own saba so ideal as a first knife. I would recommend this as a first foray into Japanese blades as it’s great value for what you get and is a gentle way to introduce yourself to the joy of Japanese knives, if you’re a bit overwhelmed with the choice, types of blade and metal used in crafting them. Highly recommended.
