This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.
We believe the quality and cutting performance of Japanese knives are the best in the world, and hope you enjoy fine craftsmanship and sharp edge with your new knife. With proper cares, every Japanese knife should be your special cooking partner for long times.
This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
This is the second one I buy of the same model I bought the first one maybe 10 years ago and I was still a beguinner at taking care of nice knives... so the blade was ruined - I'm now starting to get it back with the correct stones. I wanted to buy another one for my wife since she likes small knife. This one, with this handle is beautifull and of course cuts super great - cooking with this is a pleasure. I will definitely take care of the blade and I'm sure I will keep it more than 10 years... great investment! Thanks to propose those great knives.
This is the best paring knife I have ever used. Extremely sharp, yet easy to handle. The white corian handle is clean & pristine, allowing the knife to maintain a brand new appearance. My only regret is that it is hard to obtain the additional Hattori white corian cooking knives in the set, due to the rarity and Mr. Hattori retiring.
