After years of collaborative work with the Knife Forums "In the Kitchen" members and the premier knife maker, Mr. Ichiro Hattori, we are proud to introduce our first JCK Original, FH Series Hattori / Forums high end Chef's knives. 

The Hattori FH Series knives are produced in very small batches to ensure the highest levels of quality and performance. Every detail in design and manufacture has been taken into consideration, from the blade geometry to the special heat treat process and the blade finish.

The blade is made of VG-10 Cobalt Steel (HRc. 60 to 61). Even though the blade has a simple appearance, we can see Hattori’s detailed work and high level of craftsmanship - Especially the fine hand sharpening and polishing.

We have been working closely with Hattori to develop this new Wa Gyuto 240mm, which we hope will meet the needs of our customers and the current market trends.

The new Hattori FH-SW Wa Gyuto has a narrow blade tip and a spear point blade shape that not only looks smart, but is also highly practical for fine slicing and cutting tasks. The finger choil is carefully rounded by hand to provide a comfortable grip and allow good clearance between your hand and the cutting board.

We have been waiting for such a long time to see this kind of High-end Wa Gyuto and we are proud to start selling this new style of Wa Gyuto.

This knife comes with D-Shaped magnolia wood handle with a water buffalo horn ferrule, and also includes a matching magnolia wooden Saya (Sheath) for safekeeping.

The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is a true multi-purpose knife. Compared to a Western-style handle, the lightweight traditional Japanese handle of the Wa Gyuto knife moves the balance point of the knife further towards the tip, which makes it feel more nimble and precise.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

This knife comes with D Shaped Magnolia Wooden Handle. (Normally designed for right hand use). If you are left hander, Please select the D Shaped Magnolia Wood Handle for left handers.

Important

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Master Hattori’s passionate apprentice, Mr. Nagatomo, concentrates continuously when he is handcrafting the perfectly shaped handles of the Hattori FH series knifes. Utilizing at least 10 different manufacturing steps and several pieces of equipment, I observed him carefully shape and contour the handle by hand. With each process, the handle is gradually refined until it reaches the perfect shape and finish. I felt all of these steps and processes were necessary. Indeed, it takes time to achieve the Hattori Quality.

    Steller knife

    Bought as a 40th birthday gift for my brother who loves to cook. He has sung the praises of this knife several times since. I had the opportunity to use it when visiting him and was blown away. It's much lighter than my Wustoff and Shun knives. While it's a large knife, it's very nimble and easy to use. We used it for preparing 1.75" ribeye steaks from a rib roast. It sliced through that beautiful prime grade meat like butter. Even slicing the mushrooms was fun. Just might buy one for myself.

    Simple Design, Well Balanced and Razor Sharp

    I'm a big fan of Wa-handle especially D-Shaped handle. The Hattori FH Series FH-SWD Wa Gyuto (with D-Shaped handle) fits my hand perfectly, lightweight, well balanced and easy to maneuver (it doesn't feel like 240mm at all). About my first impression when I'm holding this gyuto knife, it feels special compared with my other gyuto knives (just my personal feeling). It's razor sharp as well (out from the box). I hope there will be more Hattori-san's product coming soon with Wa-handle.
