Talented forge smith Master Yamamoto, of Takefu City, recently finished these traditional hammer forged Aogami Super Knives. The blade core is made from Japan’s premium high carbon steel, Hitachi Aogami Super ("Blue Paper Super Steel") (HRc. 64) and it has been sandwiched between two layers of soft, corrosion-resistant stainless steel. Because Aogami Super steel is somewhat corrosion-resistant, these knives should not require a lot of maintenance. However, please note that the exposed blade core can discolor or rust if it is exposed to acid, salt or water for a long time.
When we carefully inspect the Aogami Super blade, we see a vivid cladding layer line and, around the blade core, there appear to be beautiful clouds (Created by media blasting). Master Yamamoto decided to name this finishing style 雲海, or "Sea Clouds". We think this great name really captures the essence of these new Fu-Rin-Ka-Zan Aogami Super knives. At fist glance they have a simple appearance, but if you look closer, you will clearly sense the craftsman's passion for these knives.
Each knife is fitted with a comfortable, octagonal Chestnut wood handle, which has a Black Pakkawood ferrule.
Now you can enjoy a knife that has not only has the looks of a classic Japanese traditional-style finish, but also an Aogami Super blade that will offer outstanding cutting performance and edge holding!

This knife comes with 50/50 double bevel edge geometry for both right-handed and left-handed use.
Please Note: In general, Japanese Kitchen Knives are designed for right hand use and their blades have a relatively strong convex grind on the right-hand side and relatively weak convex grind (almost straight) on the left-hand side. However, double bevel edge knives with a 50/50 grind can be used by both right-handed and left-handed people without any problems.

Beautiful petty. The "sea clouds" look nice. Build quality is very good. The standard saya does not fit this knife, so i got a bigger one from Koki. In the meantime, i made one by myself with a 3D-Printer. Aogami Super is a carbon steel that can rust or discolor through acid food ... thats why the knife in the picture doesn't look so good anymore (not that you think it looks like this, when you buy one) Would buy it again.
I find myself reaching for this knife often, just to hold it is a pleasure. The attention to detail on the blade is wonderful. I especially like the fact that there are no sharp edges other than the blade. The curvature of the choil is lovely, and makes for a comfortable pinch grip. The handle is simple, but fits nicely in the hand. Overall a great kitchen tool.
This is a very sharp knife, it feels good in the hand and is (for me) easier to use when preparing Veg or Meats as its size makes it very nimble when cutting or trimming. The steel is excellent and I personally feel it will perform just as well as its more expensive cousins - the handle is nice in the hand, simple wood but well made. I enjoy using it and it has performed well, in fact i havent needed to sharpen it yet. I protect the hard core of the blade with Camelia Oil to prevent any corrosion. The hard cutting edge darkens when you cut citrus fruits but this shows off its hard core nicely.
For more than ten tears, I have ordered many knives from your web site. All are gifts for relatives and close friends. All, and I mean all of the kitchen knives and some folding knives from your other web site , they are all superb. Excellent design, quality construction, excellent steel and always excellent and speedy service from you. Years ago, I mainly bought VG-10 blades. But now I almost always prefer hand forged blades. Especially Aogami forged blades. You offer almost unlimited choices ! Everyone of the knives that I bought and gave away as gifts, the end user always gave praise that it is very sharp and well balanced and good looks.
I bought it for my mom, but she doesn’t use it often. I use it when I prepare food, and I think it’s a great knife. The only reason mom doesn’t like it is because it’s so different from western styled pairing knives. Make sure to clean it after every use!!
