To match the impressive appearance of the R-2 Nickel Damascus blade, Mr. Masui decided to use beautiful natural wood texture of Thuya Burl Wood handle scales. The handle and the seamless stainless steel bolsters are contoured and polished by hand so that they are comfortable to grip and are nicely accented by a decorative mosaic pin and a black spacer.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
I spent some money on this knife, and I’m glad I did. But truth be told, as far as cutting performance is concerned I could have gotten the same slicing power from any knife selling for less than $100 at JCK. What my Shiki Black Dragon R-2 Damascus Series Gyuto 210mm with Thuya Burl Wood Handle got me was a blade that held it edge for a very long time, plus it looks beautiful. I love just looking at it. It’s not just me. There is just something about a quality hand forged Japanese knife that fascinates people the world over. That plus this knife makes quick work out of any piece of meat I use it on. PS: All Blades become dull with usage. With a knife from JCK you should also purchase a wet stone from JCK to keep your knife sharp and make the effort to do a good job keeping it sharp; because there are no bad knifes, only bad knife owners.
Shiki unquestionable makes some of the most striking knives we can get. The one, with its beautiful rare wood handle plus amazing Damascus coupled with R2 is a very special knife. This is not my everyday knife but I love to use it. I've honed the R2 core but after a year of use I still haven't had to sharpen it.
I have bought this very special Knives in the past. They are from skilled craftspeople and are works of art. Hopefully young people will follow as apprentices as I note many of these skilled artisans are older. Both the Handles and Blades are excellent. They are so nice I bout a transparent knife holder.
