The Polished, Vivid Blue Pakka Wood Handle Scales beautifully match the mirror polished VG-10 Tsuchime Damascus blade and the knives have an excellent overall level of fit & finish and quality. The handle material is strong, resists water and resists shrinkage. The combination of the stylish blade and attractive blue handle reminded me of a beautiful, expansive sky and clouds, hence the name "Blue Clouds" 青雲.These knives feature a full-tang construction, a forged stainless steel bolster and stainless steel handle rivets / pins.
We especially recommend our JCK Natures "Blue Clouds" Knives to customers who are considering buying their first Japanese knife and want to own a moderately priced, high quality, practical, attractive and very fashionable knife.
The tall blade and rounded nose / tip of the Santoku make it a versatile knife that is well suited to cutting meat, fish, or vegetables; Hence it’s name, which literally means “Three-purpose”. The Santoku is often recommended as a multi-purpose kitchen knife.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.
I really love the shape of knife and the steel. Specially the blue handle was very classic .everytime I hold the blue hand that feels like I am miss chef.
I've been a chef for years, and my partner wanted a nice Japanese knife for home after using my Japanese knives. So I bought this for her. It looks very nice, but it feels really good in the hand also. I wish it was for me actually. Might have to buy another one for myself.
First of all, it is always a pleasure to deal with Koki Iwahara san. He is very knowledgable and is always willing to help in selecting a knife. I have bought multiple knives from him. I recently emailed him and asked for a recommendation for a knife for my daughter. I wanted a knife with good edge retention, high on HRC scale, easy for maintaining and something beautiful to look at. Koki-san immediately recommended the JCK blue cloud series. I purchased a santoku as this is her first knife. Koki-san shipped it directly to her in a nice box and she loved the knife. It was extremely sharp out of the box and looks more like a piece of art than a kitchen tool. I would highly recommend this knife for beginners.
This is my first time using a Japanese style knife and it is definitely the best purchase I've ever made for the kitchen. I was used to very cheap knives and decided to splurge on this one. It is amazing and exceeded my expectations. It was very reasonably priced and came presharpened. The handle feels amazing (especially when dicing) and the blade is very sharp and allows for easier use than any other knife I've ever used. I use it as my everyday-use chef's knife and it works great for all of my needs. I recommend that any person wanting to spend a little more on a knife to buy this one- you will not be disappointed! It definitely is great for beginners like me.
