Master Hattori chose to use a very unique and beautiful Deep Blue Color Turquoise Gem-Composite-stone Handle. The Deep Blue Color Turquoise Gem-Composite-stone Handle has a beautiful appearance and to ensure that it can be gripped comfortably, it has been carefully contoured and polished by hand. The full tang is taper ground to reduce weight and perfect balance.
Each Hattori Custom Limited Edition Gyuto knife is "One-of-a-Kind" and comes with the Serial No. and available with only 5Pcs. (Serial No.1 (01-2021) to No.10 (10-2021)

Hattori FH Series knife is produced in very small batches to ensure a high level of quality and performance. Every detail in design and manufacture has been taken into consideration from the special heat treat process, to the hand contoured handle and to the balance, ergonomics and profile of each knife.
The blade is made of VG-10 Cobalt Steel (HRC60 to 61). Even though it is simple appearance, we can feel the Hattori’s detailed works high level of craftsmanship from finely hand sharpened and polished blade.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.
I bought this knife mainly because of the handle. I usually buy Saji and Ittou knives, but decided to try out a Hattori as well. The blade is nice and sharp, but I don't really care for the aesthetics. Hattori blades are fine, but look pretty dull in comparison to damascus offerings from other craftsmen. I'm not really a fan of the printed Hattori logo either. I would have much preferred an engraved logo. But, at the end of the day, the performance of the knife is great, so I can't fault it for that. I just wish the blade was as flashy as the handle.
