The number of professional Chefs and home cooks that prefer the rust-resistance and ease of maintenance offered by stainless steel kitchen knives is growing every year. To meet these demands, Sukenari decided to produce a high-grade stainless steel kitchen knives with popular and reliable Hitachi Gingami No.3 Japanese stainless steel.

This Sukenari Kiritsuke uses a high-grade Japanese stainless steel Gingami No.3 (HRc. 60-61) for their cutting edge and an outer cladding of soft stainless steel for additional strength and toughness.

Sukenari Gingami No.3 Clad Kiritsuke  knife is fitted with select quality Octagon Shaped magnolia wood handles that have water buffalo horn ferrules / collars. They are very comfortable and provide a secure grip.

Although this reasonable price ranged of Kiritsuke is not through Sukenari’s hammer forging process, blade is nicely hand sharpened and well handcrafted by Sukenari skillful craftsmen.

The lightweight, double bevel edged Kiritsuke might be compared to a combination of the Nakiri and the Sujihiki. It is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

  • Please do not leave this knife in water or wet condition for long time.
  • After using, please hand wash it and wipe it clean and dry with soft clothes. (Includes bolster and handle part)
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, hard foods such as lobster and crab which have hard surface.
  • We recommend re-sharpening the knife using Japanese whetstones, when it gets dull.

    Very good knife-great store

    I got this knife around 7 months ago. I have since shopped at the store 2 times, to get a gift, and to get another petty. This knife has been great. It was my first Japanese knife, and the level of craftsmanship is great. The knife came out of the box perfect, and looked beautiful. The edge from factory was very sharp, and the steel is soft enough to sharpen quickly, but tough enough to hold a good edge for a lot of cutting. I am enjoying the stainless properties as well. The handle is a beautiful magnolia wood that has a pearlescent zebra stipe effect when oiled up- I put a couple layers of flax seed oil on when I received it, and add another layer every now and then. The blade is slicey, but not super thin- so it does have mild resistance when there is a tall cut. The handle has nice ergonomics, and I haven't had any issues with it yet. I wish that I could find a Saya for this knife- I made one for it out of cardstock paper. The main downside of this knife is that it has me wanting to buy more Japanese knives ;) Koki is great to deal with, and takes customer service seriously- even though there was an issue with DHL, which was a one off thing, Koki made sure that I got the product. I appreciate this, and his warm interaction. I would and have recommended this store to friends.

    Sukenari 210mm Gingami kiritsuke

    First kiritsuke style knife, light, well balanced and beautifully sharp out of the box. The handle is very comfortable (large left hand). I did burr the blade after some heavier use in my initial excitement (my bad) but the knife resharpened quickly. This has quickly become my go to knife (home cook) over other vg10 / sg2 knives. Great value and excellent response to questions from Koki and the team at JCK
