From my first glance of this beautiful knife, I knew it should be called "Gekko”, or 月光, which means "Moonlight" in Japanese. From every angle, the Gekko knife reminded me of the way that the shape and light of the Moon changes each night.
Gekko knife has a unique & beautiful Tsuchime (“Hammered pattern”) textured Damascus blade. They feature a hand sharpened and hand honed VG-10 stainless steel blade core that is clad on both sides by a 15-layer Damascus stainless steel (HRc. 60-61. 50/50 symmetrically ground double beveled edge).
Gekko knife uses a full-tang construction, and has Mahogany wood handle with a stainless steel bolster and handle rivets.
The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

This is the Stainless steel blade kitchen knife, which has good rust resistance for easy maintenance. However even stainless steel blade kitchen knife has rust situation if you leave it with wet condition.

Do tej pory korzystałem z europejskich nożów znanej szwajcarskiej marki. Prawda jest taka że nie mają nawet podjazdu do tego japońskiego dzieła. Ostrość na najwyższym poziomie, do domowej kuchni nic więcej nie potrzebujemy. Nawet żona która bardziej preferuje krótsze noże porzuciła swojego ulubionego Szwajcara i teraz tylko Japończyk. To już o czymś świadczy! Teraz już dostałem komunikat, że potrzebujemy jeszcze jednego JCK tylko że krótszego. Współpraca z firmą JCK na najwyższym poziomie - jestem w 100% zadowolony. Great knife So far, I have used European knives from a well-known Swiss brand. The truth is they don't even have a driveway to this Japanese masterpiece. Sharpness at the highest level, we do not need anything else for home cooking. Even the wife who prefers shorter knives has abandoned her favorite Swiss and now only Japanese. This already shows something! Now I got a message that we need one more JCK, but shorter. Cooperation with JCK at the highest level - I am 100% satisfied.
