Fujiwara Kanefusa craftsman is ready to make suitable edge geometry for left handed version by hand sharpening process at 10% extra of the regular price. Please allow 2 to 3 business days for left handed version to deliver.
For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I'm a novice home chef, so my experience is mostly limited to cutting vegetables in my kitchen. For that purpose, I am so impressed with this terrific knife! I have been using German kitchen knives for the past decade and was totally shocked my first time using the Fujiwara. Very highly recommended.
This is my first Japanese knife, very happy with it!
I'm an amateur cook wanting to up my culinary game. After thorough research, this model was constantly recommended as being one of the best value knives so I finally took the plunge. This is an incredibly sharp and well made knife. I'm not used to bolster-less knives and accidentally nicked myself with the heel of the blade twice. JCK customer experience was awesome with their flat rate shipping. I had ordered on a monday morning and had it in my hands by wednesday afternoon.
I bought this knife as a birthday gift for my better half. I'm not an expert but It definitely cuts way better than any knife I've had. Partner is in restaurant industry and really likes it as well. 240 mm seems to be a good size for a "do it all" knife. Came in well packaged with instructions and authentication certificate. Fast delivery via Fedex despite the holiday season and the online shopping craze of 2020 . As one would expect with an international purchase, there was a small duty fee of around 10$. Great experience!
