Yanagiba knives are primarily used to slice boneless fish fillets for Sashimi and Sushi dishes, but they can also be used to fillet small to medium-sized fish and are often used for skinning fish. The narrow blade and relatively acute edge angle of the Yanagiba are features which greatly reduce the effort required to cut through ingredients. As with the Sujihiki, the long blade allows the fish to be cut in one single drawing motion, from heel to tip.
The combination of cutting technique, acute blade angle, and sharp edge result in very little cellular damage in the cut surface. This is particularly important for dishes where the fish is eaten raw, because it helps to preserve the original flavor and texture of the fish.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

I cut sashimi once a week at home and the Fujiwara Kanefusa FKJ Series Yanagiba gets the job done. It’s a little heavier than my other Yanagiba so it took a few cuts to adjust to the weight. It’s my first VG-1 steel knife and so far, edge retention is good.
Feeling good when using it.
I bought this knife as gift for my Jr Sous Chef. Great Value for money. The knife itself is great for a good beginner to intermediate level sushi chef. Over all i am happy with the purchase.
Excellent and beautiful knife. Quite sharp out of the box. Have only had one chance to slice salmon with it. It seemed heavier, thick spined, and more front weighted than I expected. Indeed, it weighs 173 gm rather than 158 gm advertised on the site. (See attached photo.) Perhaps the manufacturer has changed blade making or material? This is the one drawback of online knife purchasing: we can't test it out in hand. But I otherwise love JCK shop.
