Fujiwara Kanefusa FKJ Series knife features a cutting edge of V Gold stainless steel (HRc. 60), which is forge-welded with a soft stainless steel. This means that you can enjoy the fine cutting performance of a Japanese traditional-style knife whilst benefitting from the rust-resistance, edge sharpness and edge retention offered by a modern stainless steel.

Fujiwara FKJ Series knife has D-shaped handle that is made from magnolia wood and a water buffalo horn ferrule.

"Fujiwara Kanefusa" is engraved in to the blade in Japanese Kanji.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance. However, it may get rust, if kept in wet condition. 

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for a long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in a dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    It's a new toy of my husband:) He is really exited and happy with the knives: they are extremely sharp, easy to handle and bring a lot of fun while cooking. That was the best idea for a birthday present :) And the delivery service was surprisingly fast. it arrived even faster than we expected.

    Absolutely recommended - A great knife

    My first (actually second) Japanese knife purchased on my own! I was given another as a gift a few weeks ago, and I was thrilled! I immediately read up on the ways and customs of the Japanese, the variety and dedication as the approach to the various cutting material. I was fascinated and immediately went in search, saw reports and documentaries. And I decided to acquire some more of these fascinating tools. This knife will not remain the only, or actually, the second! The Nakiri knife is light, well balanced and it cuts phenomenally. I use it, as designed, for cutting vegetables only. And I must say it always delights me how well it cuts and handles. I already notice a great tendency to become a vegetarian ;) The next challenge will probably be to sharpen my knives myself. Meanwhile the 3rd (a wonderful Santoku) is on the way and I hope I will do honor to the knifes and that they will accompany me for many many more years. This will a beginning of a great friendship and a series of other purchases!

    If you’re an every day cook and you’re not worried about your blade getting rusty and you need a good work horse this is the one you should buy. Shipping was fast superfast from Japan. This is my third knife from this company and I will buy more.
