Fujiwara Kanefusa FKH Series knife provides an SK-4 high carbon steel blade (HRc. 59-59) at an affordable price. Its black pakkawood handles and stainless steel bolsters provide good blade balance and a comfortable, secure grip.

Fujiwara Kanefusa craftsman is ready to make suitable edge geometry for left handed version by hand sharpening process at 10% extra of the regular price. Please allow 2 to 3 business days for left handed version to deliver.
For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

I bought it as Christmas gift for my nephew. He loves it. He’s enjoy cooking. It was last minutes shopping but it’s delivered before Christmas! I’m happy their prompt response. And it was well packaged. I would like to get for myself next time.
I have nothing but great things to say about this purchase. Delivery was much quicker than expected. Packaging was safe and secure, and included all of the necessary instructions on care and maintenance. More importantly, the knife is well made, and nicely balanced. It is extremely sharp and has already begun to develop a nice patina. My only regret was not purchasing a matching saya [sheath] at the same time.

I spent a lot of time trolling the Internet, blogs and forums, trying to figure out if the FKH was going to be worth the discount compared to Misono Swedish. Buy this one, you won’t regret it!! if you are a home cook enthusiast and not so much a knife nerd, then the FKH will make you more than happy. Don’t get me wrong, I love my Misono Swedish carbon Gyuto 240, but I also love the FKH. I love the developing an patina and also sharpening this knife!
