For your information, most of the Japanese Kitchen knives come originally with double bevel edge sharpened 70/30 (face side/back side) for Western style knives. This geometry came from Japanese Traditional knives with single bevel edge and Shinogi blade construction. This is one of the special features and reasons why Japanese knives have an excellent cutting performance.
However, this 70/30 edge geometry is designed for right hand use, so we have a service to modify it to 30/70 for left handed users with re-sharpening process by skilled craftsman.

This was my first time handling a carbon steel knife and buying from this site. And, I've had positive experiences with both. The knife shipped out really fast and got to me safely. The knife itself is insanely sharp (so sharp that I've pricked myself a couple of times -- entirely my fault). The knife itself is very easy to handle but is not the most comfortable one in my kitchen. The bolster/heel is not rounded, which is totally fine. Just something to get used to. Please do keep in mind that this knife needs to be wiped / kept dry in order to prevent any discoloration (although I really don't mind any color) For a first carbon steel knife, I think this is a great value knife to try out!

I purchased the 180mm model to serve as a small travel knife I can throw in a bag and doesn't take up much space either in it, or at the place I'll be using it. But it's gotten more use in my home than anything else because I enjoy using it so much. Perfectly balanced at the bolster, it's short but has enough weight toward the tip to make easy work of processing veg, and is small enough to still hold up well in a utility/petty role with mushrooms, cherry tomatoes, berries and the like. Edge out of the box was wicked but faded fast - another 45 mins on a 1000 stone and it's as good as ever. I'm a fan.
