For the core steel of this Damascus knife, Master Craftsman Mr. Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention. The two outer layers of the blade are made from a unique and elegantly patterned Damascus steel, which is comprised of alternating layers of white-colored nickel steel and sparkling mirror polished layers of steel.
This KAGAYAKI R-2 Damascus Series knife features a classic design, a comfortable black pakkawood handle, and a stainless steel bolster for better balance and improved durability. The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish, which complements the appearance of the Micarta handle and Damascus blade very well.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.
For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

I've been buying knives from JCK for years and this was to replace my JCK Hattori Forums FH-6E Gyuto 210mm Ebonywood Handle that I purchased in 2010. Yes, that knife survived 10 years of kitchen abuse and I wish I took a picture of it before giving it away to my prep cook. I loved the FH so much I bought another one two years later, the Wa Gyuto 270mm which I still have and love it. The damascus looks phenomenal but haven't taken this to a whetstone yet, so comment on ease of sharpness compared to Hattori. It is also heavier, Hattori Wa Gyuto 270mm at 165grams and the Kagayaki 210mm at 190grams. Other than that, in the words of Doug Marcaida, it will slice!
Lovely knife, sharp out of the box and very nice geometry. I was expecting a nice looker - but although expectations was high I was still positively surprised! Excellent fit and finish and the Damascus-san-Mai is looks very very nice! The R2-steel is new to me, so cannot comment about sharpness retention yet or ease of sharpening!
