  It has been always pleasure to work with Master Gotou and his team of highly skilled craftsmen to develop our high quality KAGAYAKI series of Western-styled knives.  Kagayaki Basic Series, KAGAYAKI VG-10 Series, and KAGAYAKI CarboNext Series have each become very popular with our customers, due to the consistently high standards of quality and craftsmanship achieved by Master Gotou and his team of fine craftsmen.

  In order to satisfy new market demands, including those of a large number of experienced users and knife enthusiasts, Master Gotou has recently been refining his techniques for making the new generation of special steel knives. Master Gotou selected a special Powdered Metallurgy High Speed Tool Steel called “R-2”, which he heat-treats to HRc. 63. R-2 is made by a highly reputable Japanese company called Kobelco, and the steel offers remarkable cutting performance and edge retention.  It is 3 layers construction blade, outer soft stainless steel supports the R-2 hard steel core for making the strength and ease of the maintenance.

  The knives feature full tang construction, water-resistant black pakkawood (Resin impregnated wood composite) handle scales and stainless steel bolsters for extra durability and improved blade balance.

  The knife also comes with a matching wooden Saya (Sheath) with a decorative black lacquer finish.

 The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Powdered High Speed Tool Steel blade kitchen knife that has a rust resistance for easy maintenance. However, it may get rust, if kept in wet condition.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes, and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

    Really great knife

    This knife is all you can expect from a great kitchen knife! It has the right middle weight, can be sharpened to extreme sharpness (not out of the box), stainless, holds the edge for very long time, very comfortable Pakka-wood handle, overall excellent finish! Only reason I gave 4* only was that the mosaic middle PIN was different and not as nice as shown on the webpage. This seems to be not guaranteed. But functionalita of this knife is excellent!

    I recommend this product

    My first "real" knife

    I spent weeks, if not months researching what my first "real" chef's style knife would be. I finally settled on this gyuto and I can't express how pleased I am with its performance. The wooden sheath is a nice extra that helps keep the blade protected and separate from the rest of our kitchen tools. As an amateur chef, finding ways to make cooking easier and more fun is very important, and this knife has helped enormously.

    Very Sharp and Visually impressive

    I was worried that I wouldn't notice a difference with this knife even though I was spending so much money. But slicing through veggies, fruit and meat has never been so easy. Super sharp right out of the box, so be careful.

    A beauty of a knife

    First I want to thank Koki for great service and quick delivery time again! 5 days to France with a weekend in-between. Gyuto is beautiful and razor sharp out of the box. Handle with mosaik pin is well finished with rounded edges filling the grip. Black Packwood has a nice dark brown touch. Clad steel seems to have a slight tendance to micro scratch easily, at least in my case when I put it the 'matching' Saya. But to be honest: Either you by a knife just to possess and watch it or you use it, and I do! Well, anyway
