This beautiful traditional forged knife is called “Blue Moon”, which is青月Seigetsu” in Japanese. This is because we felt that the unique Tsuchime (“Hammered pattern”) dimples and dark-colored Kurouchi (“Black forged”) finish of the blade looked just like the cratered surface of the Moon.

The core of the blades is made from Hitachi Blue Steel No.2 Japanese high carbon steel, which is sandwiched between soft stainless steel for improved corrosion resistance, and thus reduced maintenance. Blue Moon Knife is hand ground and sharpened, and have very good overall fit and finish.

The oval-shaped handles are suitable for both right-handed and left-handed users. They are made of Chestnut wood with black resin ferrule.

The Gyuto is the Japanese version of the classic Western Chef’s knife. It can be used with a variety of different cutting techniques to achieve a wide range of kitchen tasks and is suitable for cutting the vast majority of meats, fish, vegetables and fruits. The Gyuto is true multi-purpose knife.

This knife comes with 50/50 double bevel edge geometry for both right and left handed use.

For your information, Japanese Kitchen knives are generally designed for right hand use with a slightly thicker and rounded grinding on the right side blade and a less rounded (almost straight flat) grinding on the left side blade. However, both right and left hander can use the knives that have double bevel edge sharpened 50/50 without problems.

Important

This is the Carbon steel blade kitchen knife that can get rust and discolor easily, and requires extra care and attention to prevent rust.

  • Please do not put the knife in the dishwasher machine for cleaning.
  • Please do not leave the knife in water or wet condition for long time.
  • After using, please hand wash the blade, bolster and handle thoroughly, and wipe it clean and dry with soft clothes. Please apply Tsubaki oil on the blade and keep it in dry place.
  • This is an extremely sharp knife. Please use special cares in using and storing it.
  • Unlike German made knives, Japanese knife blades are ground to thin cutting edge for sharper cutting and easier re-sharpening. Please protect the edge from hitting hard materials to avoid chipping or cracking.
  • Please do not use it to cut bone or frozen foods, any hard shell foods such as lobster and crab.
  • We recommend using Japanese whetstones to re-sharpen the knife, when it gets dull.

Blue Moon 240mm gyuto

This knife is one that I like pass around for culinary students. JCK is bringing in the 240 size perfect for production kitchen. These Nashiji blades are thick at the spine and thin to the edge a good grind that cuts well.The blue#2 core steel gets very sharp, easy to sharpen on a stone, and have good edge retention. The Chestnut handle has a good grip not slippery in busy kitchen. It does have a resin ferrel not going to get horn at this price. In this case doers not affect comfort. If you think of all the more expensive mass produced knives like Shuns that not as nice as this workhorse blade. Has that attractive Nashiji finish and excellent blue#2 carbon steel core. It is stainless clad on the sides of the blade.

Blue Moon 240mm gyuto

I like to use this knife as a pass around at culinary school. JCK is now caring 240 a good size for production kitchen. It is stainless clad on side of blade with high quality blue#2 carbon steel core. It can get very sharp on the stones easy to sharpen, and good edge retention. It has a Nashiji finish that that gives it a proper hand forged appeal. The Chestnut handle has a comfortable feel & grip for a busy kitchen. The ferrel is resin you can't get horn at this price. Sill it's a nice handle. It is thick in the spine the 240 has a very good grind one of the most important things in a knife. It cuts very well. Think of all the mass market Damascus VG10 knives at same price or more than cost of this blade. It is a far better blade. A true bang for the buck gyuto.

First time to try the Wa Gyuto

I used this knife along with the Nakiri to make alligator and vegitables. The knife was very sharp, light and very easy to manage. It was a pleasure to use. The next one I buy will have a octogon handle to see how well it works.
